A sliced up triangles of these three melons I had in the house, placed them around the edge of the plate. I did a hard sear pan sauté on some onion and bell pepper with just a little salt and pepper, and placed it in the center of the melons. I then put my Creole pan sautéed Louisiana speckled trout on top of my sautéed onions and peppers. Then I threw down.
