Outstanding in the Field We are Outstanding in the Field: bringing the table to the farm—dining at the source of our food.

Our mission is to re-connect diners to the land and the origins of their food, and to honor the local farmers and food artisans who cultivate it. Outstanding in the Field is a roving culinary adventure – literally a restaurant without walls. Since 1999 we have set the long table at farms or gardens, on mountain tops or in sea caves, on islands or at ranches. Occasionally the table is set indoors:

a beautiful refurbished barn, a cool greenhouse or a stately museum. Wherever the location, the consistent theme of each dinner is to honor the people whose good work brings nourishment to the table. Ingredients for the meal are almost all local (sometimes sourced within inches of your seat at the table!) and generally prepared by a celebrated chef of the region. After a tour of the site, we all settle in: farmers, producers, culinary artisans, and diners sharing the long table.

Through , she’s cultivating curiosity, connection, and the understanding that you don’t need acres of land to make a meaningful impact on the local food system. Guided by her motto, “Let’s end hunger one garden at a time,” Ms. Phyllis’s work nourishes both community and opportunity.

Grill appreciation post.

Summer has unofficially begun, and for us that means the start of another season spent cooking over an open flame. As a roving restaurant without walls, our guest chefs craft their menus around the particularities of our field kitchen. Our Argentinian-style grills travel thousands of miles around the country with us each season. They’re carefully placed (the view matters), built brick-by-brick, fired up, then broken down and packed back into the trailers before the night is through.

By the next morning, there’s little trace we were ever there. All that’s left behind are the memories of the meal and the stories shared between bites. 🔥

On October 17th, we return to Japan to set the table within Mount A*o-Kuju National Park, deep inside the immense volcanic caldera of Mount A*o. More than a breathtaking setting, this is a living landscape shaped by more than 1,000 years of human care. Through the tradition of Noyaki, controlled burns, and the grazing of indigenous Akaushi (Red Wagyu) cattle, local farmers have sustained these vast grasslands for generations.

Leading the field kitchen is acclaimed Spanish chef José Gordón of , the legendary steakhouse in northern Spain widely regarded as one of the world’s greatest destinations for beef. Revered for his pioneering work with mature cattle, traditional butchery, and wood-fire cooking, chef José has become an international authority on beef and terroir-driven cuisine. Chef José Gordón will collaborate with Japanese producers on a multi-course menu centered around Akaushi beef, along with seasonal ingredients sourced from the surrounding volcanic terrain.

10月17日、私たちは日本に戻り、阿蘇山の巨大な火山カルデラの奥深く、阿蘇久樹国立公園内にテーブルを設営します。ここは息を呑むような絶景であるだけでなく、1000年以上にわたる人々の営みによって形作られてきた、まさに生きた風景です。野焼きの伝統、計画的な野焼き、そして在来種の赤牛の放牧を通して、地元の農家は代々この広大な草原を守り続けてきました。

Located in one of our favorite corners of West Marin, is a living example of what thoughtful land stewardship can look like.

Across its rolling hills, you’ll find regenerative cattle grazing through the ranch partnership, , a climate-conscious textile nonprofit, fields blooming from a restored quarry site, sheep raised for fiber, flowers and vegetables growing nearby, and a community deeply invested in the future of agriculture.

Guest chef Seth Stowaway of joins us in the field kitchen once more, using NorCal ingredients to craft a Latin American and Southern influenced menu. 🔥

One question we receive time and time again: “Why do your events begin at such random times? 2pm? 3pm? 4pm? I thought this was supposed to be a dinner?”

Most of our gatherings are timed so that dessert is served just as the sun descends below the horizon. After the table is cleared and before dessert is set, the evening naturally pauses, candles are placed on the table, cameras inevitably come out, and everyone has a chance to savor the golden hour sunlight together.

You could say we’re always chasing sunsets, but really, we’re setting the scene to pause and appreciate this moment, in this place, with these people— until next time.

It’s been a few years since we last set the table at , gathering among rows of Pinot Noir, Chardonnay, Pinot Gris, and Gewürztraminer tucked between the rolling hills of Napa Valley. A pioneer of biodynamic farming in California wine country, Robert Sinskey has long been rooted in working with the rhythms of the land, cultivating nearly 200 acres with organic and biodynamic practices since the early 1990s.

Joining us in the field kitchen are chef Valentin Atayde, chef Yosuke Machida, and pastry chef Charlie Guyard, whose cooking draws from the warmth and restraint of Southern Italy and Japan alike.

These photographs from 2022 capture chef Kim Alter, who will join us in the field kitchen this year at Everett Family Farm on June 14.

Just blocks away from Grauman’s Theatre and the Hollywood Walk of Fame, feels worlds away. Led by Master Gardener Tony Leaman, this 4.2 acre oasis has grown into a thriving community of 300 members with 172 organic garden plots since 1975.

This year marks our 27th visit, and it never ceases to delight.
