Somebunnies love leftovers and know the secret to making Edible Emerald Easter Grass! Do you?
Happy Easter

Edible Emerald Easter Grass Treats
Yield: Makes 6 4oz servings

Ingredients

2-3oz packets of green Jello
2 cups boiling water
1 cup cold water
Assorted jelly beans for garnish

Instructions

In a 8x8 casserole dish, add Jello.
Stir in boiling water. Continue to stir until all Jello is melted.
Stir in cold water.
Cover and refrigerate until firm.
Using a large mixing spoon, spoon Jello one spoon at a time into a potato ricer. Rice Jello straight into ramekins or dessert bowls. Continue until all the Jello has been used.
Garnish with jelly beans on top and/or tucked under the "grass"

Recipe from my cookbook "Lagniappe Leftovers"

Jambalaya Nachos
Ingredients
1 tsp olive oil
1 onion, chopped
1 yellow bell pepper, chopped
1 red bell pepper, chopped
1 clove garlic, minced
2 tsp chili powder
1/4 cup water
1 cup leftover jambalaya
1 TBSP tomato paste
Corn tortilla chips
2 cups grated cheddar and Monterey Jack cheese
Jalapeno slices, for topping
Sour Cream and Diced Avocado (optional)

Instructions
Preheat oven to 350 degrees.
In a skillet, over medium heat, heat olive oil. Add onions, bell peppers, and garlic. Sauté for five minutes.
Add the chili powder. Stir for 1 minute to toast seasonings.
Add water to pan, and scrape up any brown bits.
Chop any large pieces of meat, poultry, or seafood in the leftover jambalaya, then add the jambalaya and tomato paste to the pan. Stir well. Reduce heat to low and simmer for 5 minutes.
Spread tortilla chips on a parchment-lined baking sheet. Spoon the jambalaya mixture over the chips. Top with cheese.
Bake until the cheese is melted, about 5 minutes.
Top nachos with jalapeno slices, sour cream, and avocado, if desired.
