Today is about the people who show up and do the work. In our case that's the chefs, the crew behind the counter, the people prepping before the doors open and cleaning up long after they close.

Every bowl that goes out has somebody's hands on it. We're lucky to have the ones we do.

There's a reason it never goes out of style. Hot cheese on a good crust does not need help from anything else.

Today is National Cheese Pizza Day, which is as good a reason as any, though we've never really needed one.

We make our pasta here, in house.

Simple ingredients, a machine, and somebody here early every morning getting it done before the doors open. It goes from flour to pasta in about the time it takes you to read this.

You can taste the difference. It's got a bite to it, and the sauce clings instead of pooling at the bottom of the bowl.

Nothing complicated about it, we just think it's worth doing.
