On the road today with the new trailer upgrade for the 1st time this year. Hopefully this will work better and speed things up with a better functioning cooking area.

Next batch of tshirts are in, all pre ordered hoodies are in, I'll message those that asked for one, these are great quality hoodies comparable to Carhartt. T-shirt is a restock if anyone wants one let me know. I have my 1st spring cook coming up this Sunday and can't wait to be back into the cooking gig. Thank you all for the support, the help and most importantly the encouragement along the way to make this dream get closer to a reality. John Brennan was one of my biggest supporters in all of this (and taken to soon from us all), he would smile laugh and always give a "things that go boom" shout out to me when he saw me because of one of the shows I did years ago and we ran with it. Out of respect for a great man in life that I considered a part of my extended family I added that to the sleeve and it will be on all of them. Much respect for you bud and I'll see you in Valhalla some day and we will drink from curved horns.

Well game changer in the taco world. And this one is gonna be huge literally and Is metaphorically, I'll be doing a show this week at the Homestead in the case iron pan to try it out, maybe find a new item for the food trailer and will eliminate the pizza so I'm not deal with other products. I'll have a purpose for the large sized shells I've perfected.

OK this has to be the best example out there. 7$ steak taco from taco bell, versus a 8$ taco from VIKING CHEESE TACO By BoBo there is no comparison to my fresh ingredients and the fact that it's 3 times the size. Can't wait to start the trailer retrofit this weekend after a little wrenching on the Xterra and putting new exhaust from cats back.

Just got the pop-up Move out of its winter hibernatio now to get it opened up this evening And see what i'm working with so I can start the modifications into a viking chip food trailer. Getting ready for tomorrow's cook. I'll be at the YMCA on 135 for 10 ish (could definitely use a set of hands in case i get busy, just orders and cash, if someone wants to eat for free, free VIKING CHEESE TACO By BoBo t-sh*t and some cash if you want it)the derby events will be held from 11am on. They are doing all the fish prizes as cash prizes because of ice conditions being pour, that said those that follow me know I had to pull a guy out of the water with Dale Gregor for tye Winthrop derby and that is something I would never want to do again and thankfully we weren't up as shore loading, so if your gonna fish be safe and prepare for tye worst, I'll have a 20' strap with me all all hard water cooks for sure.

Hope to see some new faces and some of the repeat people that want some good food and possibly win some cash if you buy a derby ticket. As usual I'll be donating some slate coasters from my brother and Dwoodsmith's Woodcraft and Laser Engraving which he as upgraded the Lazer with a tumble accessory to start doing those.

Finally had a minute to do a little bit of Spring cleaning today as well. As getting a few new items that I purchased over the weekend while I was in mount vernon During saturday's cook. Thank you Shawn Kelley For the newest add on to the cooking environment. Definitely one of a kind and I love it.

Also pictures of the wooden utensils I made a few years ago With some leftover mahogany scraps there's technically supposed to be 4 of them but I have a dog that's a meat head. I'll be making more soon I'm sure.
