Made from a blend of six-, seven- eight-year-old rye whiskies crafted from Horton, a nearly extinct 17th-century New York heirloom rye revived from just ten seeds, 's Jaywalk Straight Rye offers a new twist on classic rye wh***ey. The nose is honeyed, with ripe apricot and peach leading into candied pineapple, caramelized mango and dark floral sugars. On the palate, that tropical sweetness is balanced by firm structure and carries into a smooth vanilla finish, moving well beyond rye’s familiar spice. It has enough age and proof to hold its shape in a Manhattan without disappearing into the vermouth, and enough character to sip neat.
