Have you ever had golden pompano? It's one of my favorite fish. Pompano fish has a mild flavor. It is delicate, sweet, salty, strong, and enticing.
It is a good source of B12, selenium, protein, calcium, vitamin A, phosphorus, potassium, and vitamin D. Next time you're at the fish market, do yourself a favor and grab some pompano.

Yesterday, I had a root canal so I couldn't really eat anything that required too much chewing. I thought, why not make some instant ramen.... but make it boujee ๐Ÿ˜†

Last night's dinner consisted of a garlic and herb crusted French cut rack of lamb. So easy and simple. Just season with fresh ground salt and pepper, add a little cayenne if you like some spice. Then I made a paste of garlic, Rosemary, thyme, and olive oil in the food processor. Spread the paste over the lamb and let marinade for at least 30 minutes. Scrape off the paste and put the lamb in the air fryer. This was a thick cut so I cooked it at 400 degrees for 35 minutes. I spread the paste back on top in the last 5-10 minutes to give that garlicky herb crust. This lamb was to die for. It was melt in your mouth good. I served it with roasted brussel sprouts and avocado. Try it and let me know what you think.

Felt like having some Dominican style breakfast, so I made it. So delicious and filling, but now I need a nap ๐Ÿคฃ
Mangu(mashed plantains) fried cheese, salami and scrambled eggs. Added a side of sauteed spinach cause I need to get in my greens. Topped it with some pickled onions and bell pepper. Good eating!
