“We enjoy being able to explain to customers where the ingredients come from, how the products are made… We love to share our story with our customers.” — Charles YE & Maëva Manchon, Co-founders of Union Boulangerie in Paris, France.

Last week we visited Charles and Maëva who are the co-founders of Union Boulangerie, a new French bakery in Paris, and we immediately fell in love with their exquisite creations! We chatted with them and bonded over our shared business values. They said that one of their favorite parts of their job is sourcing ingredients from local vendors to create their pastries, for example, sourcing their honey from a small beekeeper in the South of France. Similar to Union Boulangerie, we at Crème Caramelle often communicate with our customers about the transparency of our production process as we value the freshness of ingredients in a sustainable environment.

Before opening their own bakery, Charles was working in finance and Maëva specialized in neurobiology research. In 2017, they decided to leave their jobs to pursue their passion for pastry arts. They attended pastry schools in Paris; then after a year of apprenticeship in various Parisian bakeries, they founded Union Boulangerie.

The fresh smell that comes out of Union Boulangerie every morning should not be missed out on! So next time you are in Paris be sure to visit them and fall in love at the first bite!

It’s like chocolate truffles in a tart...

Our decadently delicious Chocolate Carob & Fig Tart has the silkiest chocolate ganache with a special ingredient: carob. We use carob powder derived from pods similar in shape and taste as cacao pods but sweeter and therefore commonly used to give a chocolate flavor.

We make our ganache with the highest quality chocolate bars, breaking them apart and gently tempering them while mixing in the carob. It melts in your mouth like a truffle, and with the fresh figs on top, this elegant tart has a deep rich flavor and a crunchy soft texture.

We created the tart for our collaboration with alimentari flâneur, a little Parisian fruit and vegetable market located at Essex Market NYC. The founder Daniel grew up in Portugal where carob was a prominent ingredient in desserts, and carob’s chocolate-like flavor and texture reminded us of the tarte au chocolat that our grandmothers always made us. So we experimented with adding carob in our tart crust and the ganache, and we got this special mix that is unlike any other chocolate tarts.

Crème Caramelle is so honored to share our story with The Deli Newsletter (https://lnkd.in/dUnvGu8)! Thank you Teddy Wolff for the interview. We talked about why we launched this bakery and our concept:

“People think of French patisserie as a very luxurious, intricate thing, and we want it to be more of an everyday treat. We really want to modernize the industry of challah breads, too. I think challah breads are very traditional, and we want it to be a daily thing, just like our tarts.”

We also mentioned that our dream is to have these luxury food trucks around the city, and you could pick up a baby raspberry tart on your way to work, or a loaf of fluffy challah for your dinner.

We have a limited seasonal drop: Apricot Frangipane Tart!

This apricot tart is all we love about hot summer days: resting under the sunlight with some juicy fruit perfectly in season, reading our favorite books.

We made the tart by filling it with a layer of Frangipane, a mixture of almond cream and French pastry cream, topped with carefully arranged apricots and almonds slices, baked in Crème Caramelle’s signature crust. The almonds go perfectly with the sweet and sour flavor of the apricots, and our delicate crust adds another layer of crunchy texture. The result is a fruity, nutty, jammy, crispy heaven!

Why do we support local farmers and the concept of farm to table?

Farmers used to rely on farmers’ markets to directly sell produce to the public, however, not only is it not generating enough revenue, the public also have to walk or even drive to a market that might be far away from their homes.

The good thing is, many tech companies have been working on a platform that allows farmers to sell and ship their produce directly to consumers’ front doors. And now, the technology is mature enough that it is able to generate significant revenue for farmers, and consumers can set preferences on what produce to get.

“Over 10% of groceries sold in 2020 were purchased online, up from 3.4% in 2019,” according to the article.

We at Crème Caramelle are really excited about these farm-to-table technologies as they give us more access to fresh ingredients, save us time going to grocery stores, and more importantly, we are directly supporting the local farmers around us!

Summer often brings us back to our Mediterranean roots, sunset nights and the smell of fresh challah in the air.

So we twisted our signature plain challah and added two Mediterranean-inspired flavors: garlic & parsley, olive & rosemary. We cover and fill these warm loaves with our homemade extra-virgin olive oil spread that’s infused with aromatics.

Our challah bread has an extremely fluffy texture, thanks to our grandma’s secret recipe. When you pull the bread, you can see the dough slowly pulling apart with strands, a sign of perfect gluten development, making the challah have a unique chewy yet fluffy interior.

Challah is typically a savory bread, but we also offer sweet ones like juicy honey and chocolate swirl (warning: a lot of chocolate inside taking you back to the flavors of a warm Pain au Chocolat).
