Sweet Sunday ... how to pack in your iron, magnesium, calcium and potassium into one sweet bite? One vegan ingredient has it all, plus much more, and it also adds a caramel goodness to any paleo baked goods ... blackstrap molasses. This sweetener is a nutritional powerhouse, especially for women notoriously low on iron and magnesium. About 2.5 tablespoons of blackstrap molasses contains 50% percent of your daily allowance. Although I shy away from sweeteners, molasses is actually low glycemic and I prefer mine made from beets for added detoxifying minerals and nutrients. This paleo sticky toffee pudding cake will give you half of your iron, 20% of your potassium and 30% of your calcium for the day!!! It is an anti-anemia powerhouse. Would you rather eat this or take a vitamin? I know what I prefer, especially around that time of the month. I think I might have to start making these on the reg for .

Salty Sweet for Spring ... after living an urban life in NYC, the novelty of waking up and picking fruit and veggies from my garden never wears off. A client asked me if I could make donuts inspired by the garden and so I took up the challenge. The kumquat and lavender is exploding right now in Venice Beach.
Inspired by the nature outside my door and the incredible nutritional value of kumquats; these Vanilla Kumquat Paleo Donuts are topped with hibiscus salt and a little lavender are loaded with beneficial essential oils and lots of Vitamin C. And always, paleo, gluten free, sugar free & dairy free.
Remember when eating citrus that most of the beneficial vitamins, oils and fiber are found in the skin, so if you have a chance to pick up some kumquats or loquats I highly suggest —beyond beneficial and loaded with fiber and Vit C.

I’ll have an everything bagel ... hold the gluten.

So you maybe wondering why go gluten free if you are not gluten intolerant or have celiac disease?

Because scientists discovered that most people feel better on a gluten free diet. Why is that? Placebo? Nope, it’s due to a secondary inflammatory protein contained in wheat called an ATI. These ATI’s (amylase-trypsin inhibitors) can trigger powerful immune reactions in the gut IN EVERYONE that can spread to other tissues in the body causing full body inflammation. Although ATI’s make up no more than 4% of wheat proteins, they activate specific types of immune cells in the gut and other tissues, potentially worsening the symptoms of pre-existing inflammatory illnesses.

Since most of us are born with genetic mutations it is no wonder that eliminating ATI’s contributes to better health. And now that wheat proteins can be found in everything from toothpaste to soda to shampoo to salt; our bodies are being bombarded by wheat in amounts unheard of 20 years ago much less 50.

All of this contributes to a body overwhelmed by inflammatory producing ATI’s and gut busting gluten. So the next time someone says eating gluten free is just a fad —you can now confidently say, not so fast, have you heard of ATI’s?!

Let me tell you, as a celiac, there is no other country I’ve found that caters so stringently to those who eat gluten free, whether you are at a 5 star hotel or a gas station deli. Carrot Cake Waffles ... so many times I get irritated when picking up paleo/gluten free baked goods and reading the label to find an insane amount of sweetener used ... some gluten free & paleo bakeries can exceed, BY DOUBLE, the sugar amounts on simple donuts, cupcakes and cookies. What’s the point of eliminating unhealthy ingredients to then just load up on sugar? So in my quest for healthier and healthier recipes I developed this beauty today ... a 100% unsweetened sugar, gluten, grain, corn, soy, and dairy free paleo waffle. I’ve been hard at work on a new website and I think these beauties will be one of my first recipes to share. Our latest creation is a healthy habit ... a paleo, 4-layer strawberry shortcake with vanilla cake, naturally-sweetened strawberry & cream layers with a vanilla bean vegan frosting. A very sophisticated and lovely little lady named Oona enjoyed this on her 5th birthday. Kudos to her mamma for treating her daughter to sugar-gluten-dairy-grain free birthday cake! Health habits should start young --who says kids cakes have to be unhealthy?
