Instructions:

Ingredients:
The Hearty Veggie & Mince Filling:
- 500 g premium beef mince
- 2 medium starchy potatoes (like Sebago or Russet), peeled and cut into tiny 5 mm cubes
- 1 small swede (turnip), peeled and cut into tiny 5 mm cubes
- 1 medium carrot, peeled and cut into tiny 5 mm cubes
- 1 small brown onion, finely diced
- 1 tbsp Worcestershire sauce
- 2 tbsp beef stock or water (to keep the filling beautifully juicy)
- 1 tsp dried mixed herbs
- Salt and plenty of cracked black pepper to taste
The Flaky Pastry Shell:
- 4 sheets ready-rolled shortcrust pastry, thawed completely (or puff pastry if you prefer a lighter flake)
- 1 large egg, room temperature, lightly beaten (for egg wash)

Method:
1. Prepare your workspace: Preheat your oven to 200°C conventional (or 180°C fan-forced). Line two large baking trays beautifully with baking paper, leaving plenty of room for the pasties to bake evenly.
2. Chop the vegetable foundation: Ensure your potatoes, swede, and carrot are peeled and cut into tiny, uniform 5 mm cubes. (Finely dicing the raw root vegetables is non-negotiable for ensuring they cook to melt-in-your-mouth perfection in the oven without needing pre-boiling!).
