Strawberry Chocolate Crunch Cake
This strawberry chocolate crunch cake is a dreamy bakery-style showstopper with soft vanilla cake, fluffy strawberry cream, juicy strawberry pieces, a rich chocolate cookie crunch, and glossy chocolate dripping down the sides.
Yield: 12 large servings
Ingredients:
• 2 cups all-purpose flour (240 g)
• 1½ cups granulated sugar (300 g)
• 2 teaspoons baking powder (8 g)
• ½ teaspoon salt (3 g)
• ½ cup unsalted butter, softened (113 g)
• 3 large eggs
• 1 teaspoon vanilla extract (5 ml)
• ¾ cup whole milk (180 ml)
• 1 cup fresh strawberries, finely diced (150 g)
For the strawberry cream:
• 8 oz cream cheese, softened (226 g)
• ½ cup powdered sugar (60 g)
• 1 teaspoon vanilla extract (5 ml)
• 1 cup heavy whipping cream, cold (240 ml)
• ½ cup strawberry puree (120 ml)
• 1 cup fresh strawberries, diced (150 g)
For the chocolate crunch layer:
• 1½ cups chocolate cookie crumbs (150 g)
• 4 tablespoons unsalted butter, melted (57 g)
• ½ cup chopped chocolate wafer cookies (55 g)
For the chocolate topping:
• 6 oz semi-sweet chocolate, chopped (170 g)
• ½ cup heavy cream (120 ml)
• 1 tablespoon unsalted butter (14 g)
For topping:
• Fresh strawberries, halved
• Chocolate-covered wafer or cookie pieces
• Chocolate shavings or cookie crumbs
How to make it:
Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
Whisk together the flour, baking powder, and salt. In a separate bowl, beat the softened butter and sugar until light and fluffy.
Add the eggs one at a time, followed by the vanilla. Mix in the dry ingredients alternately with the milk until just combined. Gently fold in the finely diced strawberries.
Divide the batter between the prepared pans and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Cool completely before assembling.
For the strawberry cream, beat the cream cheese, powdered sugar, and vanilla until smooth. Add the strawberry puree and mix until evenly pink.
Whip the heavy cream to soft peaks, then gently fold it into the strawberry mixture. Fold in the diced strawberries for juicy little bursts throughout the cream.
For the chocolate crunch, combine the cookie crumbs, chopped chocolate wafer pieces, and melted butter. Stir until the mixture resembles moist, crunchy crumbs.
Place one vanilla cake layer on a serving plate. Spread a generous layer of strawberry cream over it, then sprinkle with chocolate crunch.
Add another layer of strawberry cream and gently press in a few extra strawberry pieces. Top with the second cake layer and cover the top with the remaining strawberry cream.
Chill the strawberry chocolate crunch cake for at least 2 hours so the layers become firm and beautifully sliceable.
For the chocolate topping, heat the heavy cream until steaming but not boiling. Pour it over the chopped chocolate and let it sit for 2 minutes. Stir until glossy, then mix in the butter.
Drizzle the chocolate ganache around the edges of the chilled cake, letting it create those irresistible chocolate drips. Finish the center with piped strawberry cream, fresh strawberries, chocolate-covered cookie pieces, and chocolate crumbs.
Chill for another 30 minutes before slicing. For the cleanest bakery-style slices, use a sharp knife warmed under hot water and wiped dry between cuts.
