Genoise is made using whole eggs. The yolk acts like an emulsifier, so you almost can’t overwhip them. Most recipes require you to heat the eggs first but you can actually skip this step. Heating the eggs just speeds up the time it takes to whip them in the stand mixer. Heating the eggs can introduce problems if you aren’t careful, so feel free to skip it!

New Restaurant Saturday - L’Angeletto. We got lasagna with zucchini, chickpea gnocchi, rigatoni alla gricia, and sautéed vegetables. Super solid three stars. Next time I’m going to eat at the restaurant!

I don’t like leaving bad reviews but I honestly wasn’t impressed with my food from Baohub. Everything was overcooked. You can actually see where the lotus balls were disintegrating. And the duck was so chewy it might as well have been jerky. The seaweed salad was too slimy (I get seaweed salad often and this texture was not it). The shrimp dumplings were probably the best part but it wasn’t enough to redeem the restaurant. ⭐️
