SAUCY BEEF & BROCCOLI NOODLES! I am in New York right now and it feels like a hot summer day, BUT back at home in the Bay Area, it's turning into fall and I am craving all the better-for-you comfort foods as the weather starts to change. For me, that usually means NOODLES-lots of noodles! This dish is a variation on my beef & broccoli recipe that you guys love, but with more sauce and lots of gluten-free rice noodles to soak it all up. In true KJ form, we prioritize protein for satiety and we have lots of broccoli for good measure. Veggies are important too! Recipe serves 4-6 12 oz gluten-free lo mein noodles (I used rice lo mein noodles) 1 tb sesame oil 1 1/2 lbs flank steak (or sirloin), sliced on the grain/cubed Sauce— 3/4 cup coconut aminos (or low sodium soy sauce) 1/4 cup hoisin sauce (I used gluten free hoisin) 1/4 cup honey or maple syrup 1/4 cup rice vinegar 1 tsp ground ginger 2 tb corn starch (or tapioca flour or arrowroot flour) Stir Fry- 1 small yellow onion, diced small (1/2 cup) 3 cloves garl

**ie VIRAL FRUIT MOCHI, but with more protein bc we are in our protein era, aren’t we?! 💅🏻 I love trying viral trends when I see them—my curiosity is always piqued and this one does not disappoint and I recommend trying it for sure! You need: 2 rice paper sheets 1 cup greek yogurt (I used fat free greek yogurt) 1 tsp maple syrup 1 scoop vanilla protein powder (optional) Strawberries and mango, chopped To coat: tapioca flour or corn starch To make: do what I do in the video 😏 In a bowl, mix together the yogurt, maple syrup and protein powder until smooth. Next, dip a rice paper sheet in warm water and as soon as it begins to soften, move it to a small bowl. Fill with your fruit, and a heaping scoop of the yogurt. Wrap it up then coat lightly in the tapioca flour/corn starch. Freeze for 40 minutes and enjoy!

This is one of those viral food trends that IS actually worth making, and trust me, that can’t be said for all of them 😏!⁣ ⁣ SAVE this post, SHARE it with friends and be sure to FOLLOW me **ie for more easy recipes like this! 🙏🏽❤️⁣ ⁣ Makes 1 wrap⁣ 1/2 cup shredded mozzarella cheese⁣ 6 pieces pepperoni ⁣ ⁣ 3 cups romaine lettuce, chopped⁣ 1/2 cup rotisserie chicken, chopped (optional)⁣ 1/2 cup garlic croutons (optional)⁣ ⁣ Cottage Cheese Caesar Dressing (makes 1 1/4 cups, you will have leftovers to enjoy all week)⁣ 3/4 cup cottage cheese ( obvi!)⁣ 1/3 cup freshly grated parmesan cheese⁣ 1 lemon, juiced⁣ 2 cloves garlic ⁣ 1/2 tb Worcestershire sauce ⁣ 2 tsp dijon mustard ⁣ 1/2 tsp kosher salt⁣ 1/2 tsp ground black pepper⁣ 1/4 cup water, to thin⁣ (more as needed) ⁣ First, make the dressing. Add all ingredients to a small blender and blend until smooth. Taste and adjust seasonings as desired. Next, preheat oven to 400F. Chop romaine and chicken and add to a bowl along with the croutons, if using. Toss with 2-3 tb of the dressing and set aside. Next, make the wrap. Spread cheese into a small circular round on a parchment lined baking sheet. Add more cheese if you’d like a bigger wrap. Press pepperoni on top. Bake for 15-16 minutes until the edges get crispy and golden. Remove from oven and let sit 1-2 minutes to firm. Flip it over and fill with the caesar salad, fold like a taco, and enjoy!

**ie 20-MINUTE CREAMY (NO CREAM) PEPPERONCINI CHICKEN! If you are in a boring rut with chicken, give this a try instead. It’s such a great weeknight dinner that everyone will love. You get tons of flavor and tanginess from the pepperoncini, mixed with a savory parmesan sauce, it is easy and so delicious!
