Ingredients:

3/4 cup (170 g) unsalted butter

1 cup (125 g) all-purpose flour

1 large yellow onion, finely chopped

2 celery ribs, finely chopped

1 large green bell pepper, finely chopped

2 teaspoons minced garlic

10 cups (2.4 liters) beef or chicken broth

14 oz (400 g) andouille sausage, sliced

14.5 oz (411 g) can stewed tomatoes

6 oz (170 g) tomato sauce

2 tablespoons hot sauce

1 tablespoon granulated sugar

1/2 teaspoon Cajun seasoning

1/2 teaspoon dried thyme

4 bay leaves

4 teaspoons gumbo filé powder, divided

2 tablespoons Worcestershire sauce

3 lb (1.36 kg) peeled and deveined medium shrimp

Salt and black pepper, to taste

Cooked white rice, for serving

Fresh parsley or sliced green onions, for garnish

Directions:

Melt the butter in a large heavy-bottomed pot over medium-low heat. Gradually whisk in the flour until completely smooth.

Continue stirring the roux frequently and patiently for about 30 to 40 minutes, until it develops a rich, deep brown color. Watch carefully because a burnt roux will need to be replaced.

Once the roux reaches the desired color, remove the pot from the heat and allow it to cool slightly.

Add the onion, celery, green bell pepper, and garlic to the pot. Return it to medium-low heat and cook for about 8 to 12 minutes, stirring occasionally, until the vegetables soften.

Slowly whisk in the broth to create a smooth, thickened base. Bring the mixture to a gentle boil, stirring to prevent the roux from settling.

Reduce the heat and add the sliced andouille sausage, stewed tomatoes, tomato sauce, hot sauce, sugar, Cajun seasoning, thyme, and bay leaves.

2 (8-ounce) packages cream cheese, softened
3/4 cup granulated sugar
1/4 teaspoon fine salt
2 large eggs
1/4 cup sour cream
1/3 cup heavy cream
* Frosting:
4 cups powdered sugar
1 cup unsalted butter, softened
1 teaspoon vanilla extract
1 package (8 ounces) cream cheese, softened

Directions:

* Cheesecake Layer:
Preheat oven to 325°F (160°C). Line a 9-inch springform pan with parchment paper and lightly grease the sides.
In a bowl, beat cream cheese, sugar, and salt until smooth. Add eggs, one at a time, then stir in sour cream and heavy cream. Pour into prepared pan.
Bake for 45 minutes. Turn off the oven; leave the cheesecake in the oven with the door closed for 30 minutes. Crack oven door and let sit for another 30 minutes. Remove, cool, and refrigerate for at least 4 hours.

Beef Shank Tacos (Chambarete or Chamorro)

Beef shank tacos are those simple tacos that are bursting with flavor. The shank, also known as beef shank or beef chamorro with bone, is slowly cooked until tender, juicy, and with that special touch of bone marrow, which gives it a deep and delicious flavor.

Ingredients

1 kg beef shank, cut into chunks with bone

½ onion

2 cloves of garlic

Salt to taste

2 bay leaves, optional

Warm corn tortillas

Chopped cilantro

Chopped onion

Green, red, or árbol chili salsa

Lime wedges

Preparation

1. Cook the shank

Place the shank in a pot with enough water. Add the onion, garlic, salt to taste, and bay leaves. Cook over medium heat for 1½ to 2 hours, until the meat is very tender and easily falls off the bone. 1. You can also cook it in a pressure cooker for approximately 45 minutes.

2. Prepare the meat

When the meat is ready, remove it from the broth. You can serve the pieces whole or shred the meat to make it easier to assemble the tacos. If you want more flavor, sauté the meat for a few minutes in a hot pan with a little fat or oil.

3. Use the bone marrow

Remove some of the bone marrow from the center of the bone and add it to the meat. It will give it a more intense, smooth, and very tasty flavor.

4. Assemble the tacos

Warm the corn tortillas well. Place the beef shank on top, add bone marrow if desired, onion, cilantro, salsa, and a few drops of lime juice.

Ingredients:

- 400g spaghetti
- 400g ground beef
- 1 onion
- 1 carrot
- 2 cloves garlic
- 500g chopped tomatoes or tomato passata
- 2 tablespoons olive oil
- Salt, pepper
- Grated Parmesan cheese
- Chopped fresh parsley

Preparation:
1. Finely chop the onion, carrot, and garlic.

2. Heat the olive oil in a large skillet and sauté the onion, carrot, and garlic for 3 to 4 minutes.
