My familyโ€™s smashed lobster roll recipe *always* hits !!! ๐Ÿฆž My dadโ€™s side of the family is from Lewiston Maine and they ran a small, local lobster shack. This is my spin on their recipe. I just added the lemon and herbs. Itโ€™s a family staple for us and always my favorite ๐Ÿ˜ one time I ate 4 in one sitting lol theyโ€™re ADDICTING!!!!

The EASIEST French Onion Soup Scalloped Potatoes โœจ Cream Cheese Chive & Onion Cream Cheese Spread makes the recipe SUPER easy!

Itโ€™s the perfect make-ahead holiday side dish โ€” rich, cheesy, and bubbling with caramelized onions. Philly gives it that signature creamy twist and saves so much time in the kitchen. I will never make scalloped potatoes the same again!!!!

Make the onions in a slow cooker overnight to make it even more simple.

CREAMY FRENCH ONION SCALLOPED POTATOES

Serves 8โ€“10

Ingredients
Two 7.5 oz tubs PHILADELPHIA Chive & Onion Cream Cheese Spread
1 1/2 cups beef stock
4 large yellow onions, thinly sliced
3 tbsp unsalted butter
3 sprigs fresh thyme or 3/4 tsp dried thyme
3/4 tsp kosher salt
1/4 cup white wine (optional)
3 lb Yukon gold potatoes, peeled and thinly sliced
1 1/2 cups shredded Gruyรจre or raclette cheese
1/3 cup grated Parmesan cheese
1/4 tsp black pepper
Butter or nonstick spray for the dish
Fresh thyme, for garnish

Instructions
Preheat oven to 400ยฐF. Grease a 10x16-inch baking dish.

Melt butter in a skillet over medium heat. Add onions, thyme, and salt. Cook 25โ€“30 minutes until deep golden and caramelized. Deglaze with white wine, if using. Remove thyme sprigs and set aside.

In a medium saucepan, warm the beef stock and whisk in PHILADELPHIA Chive & Onion Cream Cheese Spread until smooth and fully melted. Season with black pepper.

Layer half the potatoes in the baking dish. Top with half the caramelized onions, half the shredded cheese, and half the warm PHILADELPHIA sauce. Repeat with remaining potatoes, onions, cheese, and sauce. Sprinkle Parmesan on top.

Cover with foil and bake 35โ€“40 minutes. Uncover and bake 20โ€“25 minutes more, until golden, bubbling, and fork-tender.

Let rest 10โ€“15 minutes before slicing. Garnish with fresh thyme.

Go make it for your next cozy dinner or Christmas gathering! Youโ€™ll never go back to plain scalloped potatoes hehe
