Château Lynch-Bages Pauillac 2020 is a terrific fifth growth red from Bordeaux that would truly benefit from another decade in the bottle, yet enjoyable today. On the nose you find blackberry, black currant, dry earth, cedar and violet, which follows the w**e to the palate. It pairs delightfully with a grilled New York strip that comes with a warm pearl onion tomato mushroom salad and roasted potatoes alongside with bone marrow bordelaise sauce. Exquisite!

Giovanni Almondo Bricco delle Cliegie Armeis Roero 2020 is a lovely Piemonte white with crisp balance, floral complexity and velvety smooth texture. You find elderflower, honeysuckle, gooseberry, grass, Asian pear and cobblestone on the nose, which follows you to the palate. It pairs magically with a Caesar salad made with endives, as flavors and acidity enhance each bite. Exquisite!

Terrassous Rivesaltes Hors d’Âge 18 Ans is a vin doux natural (Grenache Blanc & Gris) that has been fortified after a partial fermentation and has been aged on oak in a sub 20C cellar. It leaves you with an intense, rich, balanced and complex dessert w**e that lingers for several minutes. Sniffing it gently from afar then approach and you shall find candied orange peel, prunes, toffee, candied ginger and nutty elements, which your palate will also enjoy. It paired fabulously with a cardamom rice pudding topped with a prune sauce, as flavors and sweetness complement the dessert. Exquisite! .terrassous

Fenocchio Renato Barbaresco Rombone 2018 is a from a smaller producer that shows off a robust Nebbiolo from the celebrated DOCG in Piemonte that benefits from brief decanting. It is rich, complex, balanced and lingers just right. You discover aromas of violet, black cherry, blackcurrant, anise, tar and sage, which your palate will confirm. This one pairs extraordinarily well with a vegan stew, as flavors and acid enhances each spoonful. See for recipe. Delectable!

Isole e Olena Chianti Classico 2020 is terrific Sangiovese with some Canaiolo that is well-structured, balance, and richly complex. You find notes of violet, blackberry, dried cherry, chervil, earth and smoke, which follow you to the palate. It is a w**e that is very food friendly and pairs nicely with braised rabbit pappardelle, as tannins, flavors and acid would complement the dish. Delectable!

Eva Fricke Rheingau 2021 is a delightfully crisp and dry Riesling that is well-balanced, complex and refreshing to drink. The sniff gets you lemon, lemon zest, underripe yellow apple, gooseberry, hay and garden hose, which follows you to the palate. It paired fabulously with a foie gras hotdog topped with bacon pecan crumble and blueberry ketchup, as acid and flavors complemented each mouthful. See for the recipe. Delectable!

Domaine du Vieux Lazaret Chȃteauneuf-du-Pape Blanc 2021 brings a fuller white blend experience via its rich complexity and delightful rounder texture, as it lingers pleasantly on the palate after the sip. You find lemon, Valencia orange, Asian pear, green almonds, olive oil and salinity the nose, which you also find on the sip. It pairs nicely with roasted root vegetable salad with arugula and nut, as flavors and acid complements the dish. Exquisite!

Odder Barolo 2019 is a remarkable blend of four MGAs made by an organic producer that has been around for over 200 years. The w**e leaves you with well-balanced experience that possesses a rich complexity that develops over time along with smooth tannins and a lingering finish. The sniff discovers lilac, red cherry, wild strawberry, tarragon, blacl pepper and a mixture of clay and tar, which you also find on the palate. It pairs extraordinarily well with stuffed and bacon wrapped pork tenderloin, as tannins, acid and flavors complement each bite. Exquisite!

Domaine Le Galantin Longue Garde Bandol 2005 is a marvelous balanced Mourvedre with a touch of Grenache (2%) that possesses silky smooth tannins, rich deep complexity and an intensity that lingers with a prolonged gentleness after the initial sniff. You find aromas of blackberry, blueberry, sage, licorice, forest floor and leather, which your palate will confirm. It would pair delightfully with lamb daube with potatoes and mushrooms, as flavors and tannins would marry immpeccably with this dish. Exquisite!
