**Creamy Chicken with Mushrooms on Mashed Potatoes & Spinach**
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 cups mushrooms, sliced
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 cup chicken broth
- 4 large potatoes, peeled and cubed
- 4 tablespoons butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Directions:
1. Begin by boiling the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and mash with butter, adding salt and pepper to taste. Set aside.
2. In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side, until golden brown and cooked through. Remove chicken and let rest.
3. In the same skillet, add sliced mushrooms and sauté for 3-4 minutes until they begin to brown. Add minced garlic and cook for an additional minute.
4. Pour in the chicken broth and bring to a simmer. Gradually stir in the heavy cream, allowing the sauce to thicken for about 5 minutes.
5. Add the fresh spinach to the sauce and cook until wilted. Slice the chicken and return it to the skillet, coating it in the creamy mushroom sauce.
6. To serve, place a generous scoop of mashed potatoes on a plate, top with creamy chicken and mushrooms, and garnish with fresh parsley.
