I'm a Food Geek You know you're a Food Geek when you watch The Food Network with surround sound. I do not use fat free products or skim or 2%. I like it whole baby. Bring it.

My motivation (and weakness) for food started when I was 2 days old...
ok ok - it was a really long time ago, but for as long as I can remember, Ive always had a love and appreciation for food. Thanks to my beautiful & talented mother, I learned the basics in Latin foods earlier on in life, and although she branched out a lot and didnt just feed us rice and beans 7 days a week (it was more like 4

), I still felt like there was a world of foods out there for me to eat - and learn about. When I realized there was a world outside of Wings and Mozzeralla Sticks (college days), my only option left was to attack...

Since 2006, I've been exploring, learning and tasting new foods mainly because I just love food, but I decided to try and master the foods I fell in love with so that I can please myself at home - anyday, anytime..... Stay focused. Of course it's nice being catered to, but I love being able to create my faves at home and discovering new flavors and techniques.... and since I cant afford to pursue a full-time culinary career right now, I have decided to educate myself by way of - mom, books, cooking shows, cooking classes and some good ol' inspiration. I wanted to dedicate an entire page to 'showcase' my work and of course share most of my recipes with you and invite you to try them out at home!

90% of the ingredients I use are organic, grass fed, cage free, local, fresh, etc. Besides, 'whole' is more natural and it taste even better! Credit goes to the following:

Sharing my toddler's favorite.
(And pardon my 2 year hiatus 😊)

4 Ingredient Pancake
1 banana, smashed
1 egg
2 teaspoons of oat flour
Cinnamon

Beat egg into smashed banana until a smooth consistency. Add 2 spoons of oat flour and sprinkle in some cinnamon. Mix together and pour into buttered pan in silver dollar sizes. Flip after 2-3 min.

No syrup necessary. Enjoy!

I am all about short cuts these days (and, confession, healthy frozen foods) so here is my shortcut to making classic holiday Pasteles using Yuca/Cassava. It's still the holidays in my heart.... but even if it weren't these babies can be made any time.

No Bake Veggie Pizza -
Pita Bread topped with greens, avocado, shallots, cilantro and goat cheese. Drizzle your preferred vinegar and extra virgin olive oil and sprinkle on some s&p. Toast the pita bread before piling on the goods for an even wilder time to be had.
