Sinhala Achcharu (සිංහල අච්චාරු) is a traditional Sri Lankan pickled vegetable dish distinguished by its vibrant yellow hue and a harmonious balance of spicy, tangy, and subtly sweet notes. It is a quintessential accompaniment during festive celebrations such as the Sinhala and Tamil New Year. The preparation of this dish typically entails a combination of fresh vegetables and aromatic ingredients: Red onions (pearl onions), green chilies, carrots, and frequently unripe papaya (raw papaya). Notably, natural coconut vinegar is utilized, which imparts the characteristic tanginess. Additionally, ground mustard seeds (for piquancy and thickness), turmeric (for color), ginger, garlic, peppercorns, and salt are incorporated. A modest amount of sugar is often added to counterbalance the acidity. To prepare, peel and clean the onions, slice the carrots and papaya into small pieces, and slit the green chilies. Grind the mustard seeds, ginger, and garlic with a small amount of vinegar to form a smooth paste. Combine the paste with the remaining vinegar, turmeric, salt, and sugar in a clay pot or glass bowl.
