Easy Polenta with Broccoli and Bacon
I love Polenta, it's versatile, delicious and goes with everything - I should know I grew up on it! Corn is a food from the New World—it only came to Italy after the discovery of the Americas. But you could never tell the people from Friuli-Venezia Giulia, the region I hail from, that polenta is not Friulian. So much so that the Friulianos are called polentoni, polenta eaters. Cannellini Bean and Lentil Soup. I love this hearty soup as the weather gets cold. Serve it with crusty bread and a salad of bitter greens for a casual lunch. Round the meal out with a platter of cheese and salumi, or turn the soup into a meal in itself by adding links of sausages in the last 40 minutes of cooking. When ready to serve, either cut the sausages into slices and serve in the soup, or transfer the sausages whole to a platter and serve with some salad as a second course. Lidia's Easy Spaghetti with Garlic Pesto

To balance it further, add some protein, such as swordfish, shrimp, crumbled sausages, or shredded chicken breast. Fusilli with Salami & Roasted Peppers
Think of this as a warm pasta salad, which also makes for delicious - and economical! - leftovers at room temperature. If you are short on time, you can substitute good-quality jarred roasted peppers, but I think it's worth it to roast your own, since they're one of the stars of this dish. You can roast a big batch of five or six peppers at a time. Peel and slice them as I suggest below, and drizzle with olive oil. They'll keep in your refrigerator for a week or so, and you can enjoy them in pastas, frittatas, salads, and sandwiches. Buon Appetito!
