No Bake Chocolate Oat Bars

Ingredients:
1 cup butter
1/2 cup packed brown sugar
1 teaspoon vanilla extract
3 cups quick cooking oats
1 cup semisweet chocolate chips
1/2 cup peanut butter

Instructions:

Melt butter in large saucepan over medium heat. Stir in brown sugar and vanilla. Mix in the oats. Cook over low heat 2 to 3 minutes, or until ingredients are well blended. Press half of mixture into the bottom of the prepared pan. Reserve the other half for topping.

Meanwhile, melt chocolate chips and peanut butter in a small heavy saucepan over low heat, stirring frequently until smooth. Pour the chocolate mixture over the crust in the pan, and spread evenly with a knife or the back of a spoon.

Ingredients:

1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1/4 cup unsalted butter, softened
1/2 tsp vanilla extract
1/2 cup sour cream
1 cup granulated sugar
2 large eggs
1/4 cup milk
1 cup chopped fresh strawberries
1/2 cup heavy cream for frosting
2 tbsp powdered sugar for frosting
1/2 tsp vanilla extract for frosting
Additional sliced strawberries for garnish

Directions:

-Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
-In a bowl, whisk together flour, baking powder, and salt.
-In a separate bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
-Mix in the sour cream and milk until well combined. Gradually add the flour mixture, stirring just until incorporated.
-Fold in the chopped strawberries.
-Divide the batter among the prepared cupcake liners and bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
-For the frosting, whip the heavy cream with powdered sugar and vanilla until stiff peaks form. Frost the cooled cupcakes and garnish with sliced strawberries.

Ingredients:

Cookie Cup:

1 cup unsalted butter, melted
1/2 cup granulated sugar
1/4 cups packed brown sugar
2 large eggs, room temperature
1/2 tsp pure vanilla extract
3 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
3/4 cup chocolate chips

Cannoli Filling:

1/2 cups whole milk ricotta cheese, strained
8 oz. mascarpone cheese
1 cup powdered sugar
1 tsp vanilla extract
3/4 cup mini chocolate chips, plus additional for topping

Optional:
Chocolate drizzle (melt a 4 oz. chocolate bar)

Directions:

For the Cookie Cups:

-Preheat oven to 350°F (175°C).
-In a large bowl, whisk together melted butter, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
-Combine flour, baking soda, and salt in a separate bowl.
-Gradually add dry ingredients to wet ingredients, mixing until just combined.

Fold in chocolate chips.

-Press cookie dough into the cups of a mini muffin tin to form cups.
-Bake for 10-12 minutes or until the edges are golden. Allow to cool in the tin before removing.

For the Filling:

-In a medium bowl, blend ricotta, mascarpone, powdered sugar, and vanilla extract until smooth.

Chicken Bacon Ranch Stromboli

ingredients

1 lb pizza dough
1/2 cup ranch dressing
1 cup shredded mozzarella cheese
1/2 cup cooked bacon, crumbled
1 cup cooked chicken, diced
1/4 cup red onion, thinly sliced
1/4 cup chopped fresh parsley
1 egg (for egg wash)

instructions

-Preheat the oven to 375°F (190°C).
On a lightly floured surface, roll out the pizza dough into a rectangle.
-Spread the ranch dressing evenly over the dough, leaving a small border around the edges.
-Layer the mozzarella cheese, bacon, chicken, and red onion over the dressing.
-Roll up the dough tightly from one long side, pinching the seams to seal.
-Place the roll seam side down on a baking sheet lined with parchment paper.
-Brush the top with beaten egg and make small cuts across the top to allow steam to escape.

Bake for 25-30 minutes, or until golden brown.

Dill Pickle Pasta Salad

Ingredients:

• 1 pound dry rotini pasta
• 8 ounces sharp white cheddar cheese, cubed
• 2 cups diced dill pickles, plus extra for garnish
• 1 tablespoon chopped fresh dill, plus extra for garnish
• 1 tablespoon chopped fresh chives, plus extra for garnish
• ¾ cup mayonnaise (store-bought or homemade)
• ½ cup sour cream
• ⅔ cup pickle juice (from the pickle jar)
• ½ white onion, minced
• 2 cloves garlic, minced
• ½ teaspoon kosher salt
• ¼ teaspoon ground black pepper

Instructions:

1. Cook the rotini pasta following the instructions on the package until it’s just right, not too soft, not too firm. Then, let it cool down completely.
2. Take a big salad bowl and put in the cooled pasta, the cubed cheese, the diced dill pickles, and the chopped dill and chives.
3. In another bowl, mix together the mayonnaise, sour cream, pickle juice, minced onion, minced garlic, salt, and black pepper until it’s all blended well.
4. Pour this dressing over the pasta mixture and give it a good toss until everything is nicely coated.
5. Pop the salad into the fridge for at least an hour before serving. This helps all the flavors meld together and makes it taste even better.
6. Just before serving, if you’re feeling like adding an extra zing, toss the salad with a bit more pickle juice, somewhere between ¼ to ½ cup.
7. Finally, make it look extra inviting by garnishing with some more diced pickles, fresh dill, and chives.

Homemade Butterscotch Delight

Ingredients:

1 cup brown sugar
1/4 cup cornstarch
1/2 teaspoon salt
3 cups whole milk
3 large egg yolks
2 tablespoons unsalted butter
2 teaspoons vanilla extract
Whipped cream for serving
Directions:

In a medium saucepan, whisk together brown sugar, cornstarch, and salt.
Gradually whisk in milk until smooth.

1¼ cups water, at room temperature
1 cup (218 g) vegetable oil

For the Ganache:
1 cup (238 g) heavy whipping cream
1 bag (12 ounces) semi-sweet chocolate chips

Directions:
-Preheat your oven to 350°F (177°C) and generously spray a 10-inch Bundt pan with nonstick cooking spray.
-In a large mixing bowl, combine the chocolate cake mix, brownie mix, eggs, water, and oil. Whisk together for 2 minutes, or until most lumps have disappeared.
-Pour the smooth batter into your prepared Bundt pan. Bake for 50-55 minutes, or until a toothpick inserted into the cake comes out clean with a few moist crumbs attached.
