π₯£ Creamy Artichoke and Vegetable Soup β Cozy, Hearty & Full of Flavor!
This Creamy Artichoke and Vegetable Soup is the perfect comforting bowl for chilly days β packed with tender vegetables, rich creamy broth, and the subtle tang of artichokes. Itβs smooth, savory, and wholesome all in one spoonful! πΏπ
π Ingredients:
2 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
2 medium carrots, diced
2 celery stalks, diced
1 can (14 oz) artichoke hearts, drained and chopped
1 medium potato, peeled and cubed
4 cups vegetable broth
Β½ cup heavy cream (or half-and-half)
Β½ tsp dried thyme
Β½ tsp salt (or to taste)
ΒΌ tsp black pepper
2 tbsp grated Parmesan (optional)
Fresh parsley or chives, for garnish

SautΓ© aromatics: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Cook until softened (about 5 minutes).
Add main ingredients: Stir in potatoes, chopped artichokes, thyme, salt, and pepper. Pour in vegetable broth.
Simmer: Bring to a boil, then reduce heat and simmer for 20 minutes, until vegetables are tender.
Blend: Use an immersion blender (or transfer to a blender in batches) to puree until smooth and creamy.
Add cream: Return to low heat, stir in heavy cream and Parmesan, and simmer for 5 more minutes.
Serve: Garnish with fresh parsley or chives and a drizzle of olive oil.
