Yesterday I had an incredible opportunity to share a meal with Chef Jae Jung () at her groundbreaking Korean/Cajun fusion restaurant .

I was so inspired to learn about her journey, from immigrating to the U.S. and attending culinary school, to opening her restaurant during the pandemic, competing on , and now opening her second location.

Her starting her restaurant and doing everything herself to get it off the ground reminded me of my own path starting MIL during the economic recession. Great things are born from times of struggle.

Bringing Korean flavors seamlessly into the story of the deep American roots of Cajun food (French, West African, Spanish, etc.) is at the heart of varied and diverse storytelling, and she does a masterful job incorporating okra, green tomatoes, and jambalaya (!) with kimchi.

It’s women like this that inspire me during this celebration of Women’s History. Constantly pushing the boundaries of culture and cuisine while pushing back against the expectations others try to set for us.

🥬 Today is National Cabbage Day, and our founder, Lauryn, is here to drop some cabbage knowledge in what has already been called the “Year of the Cabbage” by Vogue, Business Insider, and Pinterest Trend Reports.

When you’re making kimchi the traditional way by salting and fermenting, most shoppers don’t realize that not all cabbages are built the same (shoutout our professional cabbage connoisseurs). Napa cabbage is widely considered the gold standard in kimchi making. Its leaves absorb the seasoning the best while also hitting that ideal texture and taste.

There are more than 200 documented varieties of kimchi — from radish and cucumber to mustard leaf and green onion — but we recommend starting with baechu kimchi. If you’re shopping for your first kimchi, look for Napa cabbage at the top of the ingredient list.

What’s your favorite kind of kimchi?
