Who's Craving Pork Adobo? ๐คค
Pork adobo is a classic Filipino dish made by slowly simmering pork until it's tender and flavorful. It is one of the Philippines' most beloved comfort foods because it's simple to make, delicious, and tastes even better the next day.
The main ingredients are:
Pork (typically pork belly or pork shoulder)
Soy sauce
Vinegar
Garlic
Whole black peppercorns
Bay leaves
Water
Some families also add onions, brown sugar, potatoes, or boiled eggs for extra flavor.
What does it taste like? Pork adobo has a rich, savory, tangy, and garlicky flavor. The soy sauce gives it a deep umami taste, while the vinegar adds a pleasant tanginess that balances the richness of the pork.
How is it cooked?
Marinate the pork in soy sauce and garlic (optional but adds flavor).
Brown the pork in a pan.
Add the marinade, vinegar, bay leaves, peppercorns, and water.
Simmer gently for 45โ60 minutes, or until the pork is very tender.
Reduce the sauce until it becomes rich and coats the meat.
Pork adobo is traditionally served with hot steamed white rice, which pairs perfectly with its flavorful sauce. It's also a great make-ahead meal because the flavors continue to develop overnight, making leftovers even more delicious.
