Bibingka-esk A new twist to the traditional Filipino treat. Bibingka is a traditional Filipino dessert popular during Christmastime. Bibingka-esk marries traditional and new.

It is usually made with rice flour and coconut milk and served on a banana leaf. The consistency of the traditional Bibingka is soft and spongy. My rendition of bibingka at Bibingka-esk has a different twist. Aside from being deliciously soft, it's also crunchy, chewy, and moist. Plus, there are different flavors like chocolate ganache, fruit fillings, peanut butter, s'mores, and tarts with assorted fruit. It infuses the flavors of this wonderful Filipino dessert with modern flavors.
