Marshmallow Yule Log, also known as Church Windows or Stained Glass, is a classic retro Christmas treat. This delightful dessert combines colorful mini marshmallows and chopped walnuts enveloped in rich, melted chocolate, all rolled in flaked coconut for a festive appearance.
Ingredients:
½ cup salted butter
2 cups semisweet chocolate chips
1 cup chopped walnuts
5½ cups (10.5-ounce package) rainbow-colored miniature marshmallows
1 cup flaked coconut
Instructions:
Melt Chocolate and Butter:
In a saucepan over low heat, melt the butter and chocolate chips together, stirring until smooth.
Remove from heat and allow the mixture to cool slightly to prevent melting the marshmallows in the next step.
Combine Ingredients:
Stir in the chopped walnuts until evenly distributed.
Gently fold in the miniature marshmallows, ensuring they are fully coated with the chocolate mixture.
Form the Log:
Lay out a sheet of parchment paper and sprinkle it with half of the flaked coconut.
Transfer half of the marshmallow mixture onto the coconut-covered parchment.
Shape the mixture into a log, using the parchment paper to help form and roll it, pressing the coconut onto the exterior.
Repeat the process with the remaining mixture and coconut to form a second log.
Wrap and Freeze:
Wrap each log tightly in plastic wrap to maintain its shape and prevent freezer burn.
Place the logs in the freezer for at least 2 hours, or until firm.
Serve:
Once set, unwrap the logs and slice them into ¼-inch thick pieces.
Serve chilled or at room temperature.
Storage:
Store slices in an airtight container in the refrigerator for up to 2 weeks.
For longer storage, keep the wrapped logs in the freezer for up to 3 months; thaw slightly before slicing and serving.
