Many of the sardines now arriving are over 100g in size. At this time of year, they carry plenty of fat even under the skin, making them especially flavorful. Their rich sweetness and soft, almost melting texture make them a highly recommended item for sashimi and grilled dishes.
MAGOCHI - Flathead

We are seeing many high-quality flathead with thick, firm flesh. Its beautiful white meat is known for its refined sweetness and pleasantly firm texture. It is excellent for sashimi, and when grilled, the flesh tightens further and the umami becomes even more pronounced.
