Cajun Garlic Chicken with Parmesan Butter Linguine
Ingredients:
1½ lbs boneless, skinless chicken breasts, cut into 1-inch cubes
2 tablespoons olive oil
4 tablespoons butter, divided
4 cloves garlic, minced
1 tablespoon Cajun seasoning
1 teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon black pepper
¼ cup chicken broth
2 tablespoons heavy cream
2 tablespoons grated Parmesan cheese
Fresh chives, chopped, for garnish (optional)
1 lb linguine pasta
6 tablespoons butter
4 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese, plus extra for serving
½ cup reserved pasta water
¼ teaspoon salt
¼ teaspoon black pepper
Directions:
Cook the linguine in well-salted water until al dente. Save ½ cup of the cooking water, then drain the pasta and keep it warm.
Place the chicken in a bowl and add the olive oil, Cajun seasoning, smoked paprika, ½ teaspoon salt, and ¼ teaspoon black pepper. Turn the pieces until evenly seasoned.
Melt 2 tablespoons of the divided butter in a large skillet over medium-high heat. Spread the chicken across the pan and cook until browned and no longer pink in the center. Transfer it to a plate.
Add the remaining 2 tablespoons of divided butter to the same skillet. Stir in the first 4 cloves of garlic, then pour in the chicken broth and 2 tablespoons heavy cream.
Mix in the 2 tablespoons Parmesan and place the chicken back in the skillet. Spoon the garlic butter sauce over the pieces, then keep them warm over low heat.
Melt the separate 6 tablespoons butter in another large skillet or saucepan. Add the remaining 4 cloves of garlic and stir briefly before pouring in the 1 cup heavy cream.
Add the 1 cup Parmesan, ¼ teaspoon salt, and ¼ teaspoon black pepper. Stir over low heat until the sauce is smooth, using reserved pasta water a little at a time as needed.
Add the linguine and turn it through the Parmesan butter sauce until every strand is covered.
Spoon the linguine onto plates and add the Cajun garlic chicken over the top. Finish with extra Parmesan and chopped chives if desired.

Italian Beef Linguine with Garlic Butter Cheese Cream
Ingredients:
12 oz linguine
1½ lbs lean ground beef
2 tablespoons olive oil
3 tablespoons unsalted butter
1 small yellow onion, diced
½ red bell pepper, diced
6 garlic cloves, minced
1 teaspoon Italian seasoning
1 teaspoon garlic powder
½ teaspoon smoked paprika
½ teaspoon onion powder
½ teaspoon salt
½ teaspoon black pepper
1 cup beef broth
1¼ cups heavy cream
¾ cup freshly grated Parmesan cheese
1 cup shredded mozzarella cheese
2 oz cream cheese, softened
½ cup reserved pasta water
2 tablespoons chopped fresh parsley
Directions:
Boil the linguine in well-salted water until al dente. Save ½ cup of the cooking water, then drain the pasta.
Heat the olive oil in a wide skillet over medium-high heat. Crumble in the ground beef and cook until browned. Remove any extra grease from the pan.
Add the butter, onion, and red bell pepper. Let the vegetables soften for 4 to 5 minutes, then mix in the garlic.
Sprinkle the Italian seasoning, garlic powder, smoked paprika, onion powder, salt, and black pepper over the beef. Stir for about a minute to distribute the spices.
Pour in the beef broth and let it reduce for 2 to 3 minutes, picking up the browned flavor from the skillet.
Lower the heat and add the heavy cream. Work in the softened cream cheese until it disappears into the sauce.
Stir in the Parmesan and mozzarella in small amounts, allowing the cheese to melt before adding more.
Add the linguine and turn it through the beef mixture until the sauce covers every strand. Use reserved pasta water as needed to keep it easy to mix.
Finish with the chopped parsley and serve while warm.
