One-Pot Spicy Tuna Pasta

Ingredients:

8 oz pasta (spaghetti or penne)
1 can tuna (packed in water or oil), drained
1 tablespoon olive oil
3 cloves garlic, minced
1 teaspoon red pepper flakes
1 cup cherry tomatoes, halved
1 cup vegetable or chicken broth
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Grated Parmesan cheese (optional)

Directions:

1. Warm the olive oil in a large pot over medium heat. Add the minced garlic and red pepper flakes, cooking until the garlic turns fragrant and just begins to brown.

2. Toss in the cherry tomatoes and cook for a few minutes until they soften and release some of their juices.

3. Add the pasta to the pot and pour in the broth, making sure the pasta is mostly submerged.

4. Bring the liquid to a boil, then reduce the heat to low and simmer, stirring occasionally, until the pasta is tender and has absorbed most of the broth—about 10 to 12 minutes.

5. Gently fold in the drained tuna and season everything with salt and pepper to taste. Let it heat through for a minute or two.

6. Serve the pasta immediately, sprinkled with chopped parsley and, if you like, a bit of grated Parmesan on top.

1 onion, chopped

2 tablespoons olive oil
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste

Directions:

1. Warm the olive oil in a large skillet over medium heat.
2. Add the chopped onion and garlic, cooking until the onion softens and becomes translucent.
3. Crumble in the ground turkey and cook until it’s fully browned, breaking it up as it cooks.
4. Stir in the diced zucchini, corn, black beans, and tomatoes.
5. Season the mixture with chili powder, cumin, salt, and pepper, adjusting to your taste.

1 lb ground lamb
2 cloves garlic, finely minced
1 tsp salt
½ tsp black pepper
½ tsp ground cumin
½ tsp smoked paprika
4 hamburger buns
1 cup tzatziki sauce
Fresh cucumber slices
Fresh tomato slices
Red onion slices

Directions:

1. In a mixing bowl, combine the ground lamb with the minced garlic, salt, black pepper, cumin, and smoked paprika. Mix everything together until the spices are evenly distributed throughout the meat.
2. Heat a skillet or griddle over medium-high heat until it’s hot.
3. Divide the lamb mixture into small portions, form them loosely into balls, then press them down flat directly onto the skillet to create thin patties.
4. Cook each patty for about 3 to 4 minutes on one side until nicely browned, then flip and cook for an additional 3 to 4 minutes, or until cooked through.
5. While the meat is cooking, toast the hamburger buns either in another pan or in the oven until golden and warm.

2 cups cooked rice

1 cup shrimp, peeled and deveined
2 tablespoons soy sauce
2 tablespoons vegetable oil
2 green onions, chopped
2 cloves garlic, minced
Salt and pepper, to taste
Optional: 1 egg, beaten

Directions:

1. Warm the vegetable oil in a large skillet or wok over medium heat.
2. Add the minced garlic and cook for about 30 seconds, stirring until it releases its aroma.
3. Toss in the shrimp and cook them until they turn pink and are just cooked through, about 3 to 4 minutes.
