One-Pot Spicy Tuna Pasta
Ingredients:
8 oz pasta (spaghetti or penne)
1 can tuna (packed in water or oil), drained
1 tablespoon olive oil
3 cloves garlic, minced
1 teaspoon red pepper flakes
1 cup cherry tomatoes, halved
1 cup vegetable or chicken broth
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Grated Parmesan cheese (optional)
Directions:
1. Warm the olive oil in a large pot over medium heat. Add the minced garlic and red pepper flakes, cooking until the garlic turns fragrant and just begins to brown.
2. Toss in the cherry tomatoes and cook for a few minutes until they soften and release some of their juices.
3. Add the pasta to the pot and pour in the broth, making sure the pasta is mostly submerged.
4. Bring the liquid to a boil, then reduce the heat to low and simmer, stirring occasionally, until the pasta is tender and has absorbed most of the broth—about 10 to 12 minutes.
5. Gently fold in the drained tuna and season everything with salt and pepper to taste. Let it heat through for a minute or two.
6. Serve the pasta immediately, sprinkled with chopped parsley and, if you like, a bit of grated Parmesan on top.
