Miso crunch salad 🥢 by

Dressing:
2 tbsp light soy sauce
1 tbsp balsamic vinegar
1 tbsp white wine vinegar
1 tbsp miso paste
1 tbsp brown sugar
1/2 small garlic clove
1/4 cup extra virgin olive oil
Wisk all dressing ingredients until smooth.

Salad:
Purple cabbage
White cabbage
Carrots
Cucumber
Mint
Red chilli
Spring onion
Coriander
Vermicelli noodles
Sesame seeds
Peanuts

Soak vermicelli noodles in boiling water for 3-5 mins
Drain and rinse with cold water

Finely slice the cabbage (I used a mandolin) Julienne (thinly slice) the carrots and cucumber

Roughly chop the mint, coriander & spring onion
Toss everything together and top with crunchy peanuts & sesame seeds ✨
