🍋 Easy Lemon Zucchini Bread 🍋

Ingredients:
- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup granulated sugar
- 2 large eggs
- ⅓ cup vegetable oil
- ⅓ cup plain Greek yogurt
- 2 tbsp lemon juice (freshly squeezed)
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- 1 cup grated zucchini (about 1 medium zucchini)
- Optional: ½ cup chopped walnuts or pecans
Directions:
1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
3. In a large bowl, beat the sugar and eggs together until light and fluffy. Add the vegetable oil, Greek yogurt, lemon juice, lemon zest, and vanilla extract. Mix until well combined.
4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
5. Fold in the grated zucchini and, if using, the chopped nuts until evenly distributed.
6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it loosely with aluminum foil.
8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
