4 oz (115 g) smoked salmon, sliced
1 large egg
1 ripe avocado

1 cup button mushrooms, sliced
¼ small red onion, thinly sliced
1 tbsp capers
1 tsp olive oil
1 tsp fresh lemon juice
Salt, to taste
Freshly cracked black pepper, to taste

Cook the mushrooms: Heat the olive oil in a skillet over medium-high heat. Add the sliced mushrooms and sauté for 5–6 minutes until tender, browned, and glossy. Season lightly with salt and pepper.
Make that egg: Bring a small saucepan of water to a gentle simmer. Poach the egg for about 3–4 minutes, until the white is set but the yolk stays gloriously runny.
Mash the avocado: Scoop the avocado into a bowl, add lemon juice and a pinch of salt and pepper, then mash roughly with a fork. Keep some texture—no need to go totally smooth.
Prep the veggies: Chop the tomato into chunky pieces and thinly slice the red onion.
Build the bowl: Arrange the smoked salmon, mashed avocado, tomatoes, sautéed mushrooms, and red onion around a wide shallow bowl.
Finish it up: Place the poached egg on top, scatter capers over the salmon, and hit everything with plenty of freshly cracked black pepper. Break into that runny yolk and dig in!
