DESCRIPTION: 20,000 bottles of this blend of Cabernet Sauvignon (70%) and Merlot (30%) have been produced. The grapes from 30-year-old vines grown in siliceous clay soil are destemmed before vatting for 15 to 20 days. After filtering, the wine is partially aged in oak barrels for 12 months before bottling.

TASTING NOTES: This wine displays a garnet color with rose glints. It reveals aromas of vanilla, blackcurrant and toast. It is supple and ample on the palate with round tannins.

FOOD & WINE PAIRINGS: It matches well with a rib roast and fried sweet potatoes, as well as duck liver, sauce pork and soup.

HISTORY: Château Fayau is a charming “chartreuse”-style house surrounded by vines overlooking the town of Cadillac. The Médeville family acquired the property in 1826 but the wine-making tradition goes all the way back to 1711. They possess a level 3 High Environmental Value (HEV) certification. In 2019, Terre de Vins selected Médeville as one of the top 100 French vineyards prioritizing the environment. The vineyard is on schedule to receive its AB organic certification by 2020.

DESCRIPTION: The first mention of Château Fontarèche can be found in a deed dated 984. The vineyards form a perfect 145-hectare square around the moated castle.

TASTING NOTES: A rich bouquet of red fruits and soft spices. Fresh and dense on the palate, built around elegant tannins and marked by black fruit with minerality. Well-balanced and fruit-driven finish, delicately reverberating with bright fruit notes. A perfect blend of Carignan (made by carbonic maceration), Syrah, Mourvèdre and Grenache.

REGION: Corbières, in Southern France, between Narbonne and Carcassonne, off the Mediterranean Sea.

HISTORY: King Louis XIV entrusted Château Fontarèche in the late 17th century to the Mignard family whose members included Pierre Mignard, a famous painter; his VIRGIN OF THE GRAPES is on display at the Louvre. The LAMY family, which now owns Fontarèche, are descendants of the MIGNARDS, with Marie-Eulalie MIGNARD (who died in 1943) being the last owner to bear the Mignard name.

DESCRIPTION: The Pinot Noir is the true essence of our Portland limestone terroir from the Jurassic Period. We believe in natural crop covers and organic nutrients to keep a naturally balanced fauna and flora and to encourage indigenous life, thus providing our 32-year-old vines with the best possible habitat.

TASTING NOTES: Attractive salmon pink. A nose which offers gentle notes of red fruits and orange flesh. Fleshy, crunchy, fruit-driven on the first sip, lively mid-palate. Crisp character, light, refreshing and complex flavors, long finish. Wonderful rendition of the appellation. The 2015 vintage reached full ripeness and is exceptional. Production: 4,500 bottles.

FOOD & WINE PAIRINGS: Serve alone as an aperitif, with goat cheese or with dishes like shellfish and fish.

HISTORY: The Vattan family owns the domain which was founded in 1930. In 2008, Pascal Joulin took over the estate. The 7.8 hectares of Sauvignon Blanc and 1.3 hectare of Pinot Noir are divided between two main types of terroir, limestone and clay, which benefit from southern and northwestern exposure respectively, and are typical of Maimbray’s hillsides.

DESCRIPTION: This wine is supple and refreshing, and an outstanding example of the Côtes du Rhône appellation. It is made of a blend of Grenache, Syrah, Mourvèdre and Carignan, with a vineyard average age of 52 years.

TASTING NOTES: Displays a sustained ruby and purple colour, as well as a nose of ripe red and black fruit with peppery and spicy notes enhanced by delightful freshness. An aromatic fruitiness and balanced texture add even more finesse and length. Production: 20,000 bottles. Sustainable farming practices are used.

REGION: In southern Côtes du Rhône, on the right bank of the Rhône river, near the town of Lirac, in France.

HISTORY: The Maby family settled in Tavel in the mid-19th century. Initially produced in the family home, the wine was mainly intended for home consumption and a local clientele. The first bottles bearing the "Domaine Maby" label were produced after the Second World War, in 1946. Auguste Maby was the first to make a living from winemaking.

DESCRIPTION: In 2019, Alain Demers from Boivin Selection and Bruno Le Breton from Domaine de la Jasse stayed true to their philosophy of "everyday Grand Cru". They united forces to create a new brand “Chez Moi Pair with Friends”. Their goal was to offer a wine coming from a great terroir that everyone could enjoy and drink with friends. Domaine de la Jasse has a Mediterranean microclimate property that is favorable to producing an expressive and well-rounded cabernet sauvignon.

TASTING NOTES: A mature full-bodied cabernet, fresh notes of red currant and berry fruit followed by licorice, mocha, herbs, and peppery spices. The aging process done in French oak barrels yields a powerful and refreshing wine that comes from the bright limestone parcels of southern France.

REGION: Languedoc-Roussillon, France.

FOOD & WINE PAIRINGS: Grilled meats, sausage, charcuterie, and blue cheese.

HISTORY: Hans Walraven, a Dutch wine importer, bought the estate in the early 1990s. It was the ideal place to develop his dream of producing a great wine. The virgin soils, the protection of the hillside, and the microclimatic conditions reminded him of Bordeaux.
