Our Executive Chef George Mandakas is about to start hosting a brand new television series on board the The Route 66 Kitchen & Dining Car. In fact, you'll be seeing him on all the major foodie channels starting in June. Can't wait until he comes down to Tampa to begin filming the first 13 week part series on board the trolley this Summer.

In the spirit of this weeks blog, who can forget this dish...Spaghetti with Julienne Beets, Rapini and Homemade Ricotta. Keep in mind, there is not a single drop of tomato in this recipe. The gorgeous color comes from simply tossing the cooked pasta and beets in a hot pan with olive oil. Simple...delicious...and HEALTHY!
