Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup vegetable oil
- 2 cups granulated sugar
- 5 large eggs
- 2 1/2 cups all-purpose flour

- 1 cup buttermilk
- 1 tsp vanilla extract
- 1 cup chopped fresh strawberries
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans (optional)
- 1 (8 oz) package cream cheese, softened
- 1/2 cup unsalted butter, softened
- 1 tsp vanilla extract
- 3-4 cups powdered sugar
- 1/2 cup finely chopped strawberries (blot dry to reduce moisture)
- Whole strawberries, for garnish
- Powdered sugar, for dusting
Directions:
Start by preheating your oven to 325°F (165°C). Prepare your bundt or tube pan by greasing and flouring it—this will help your cake come out beautifully. In a mixing bowl, combine the softened butter, vegetable oil, and granulated sugar. Beat them together until the mixture is light and fluffy—a crucial step for that perfect texture! Then, add the eggs one at a time, making sure to beat well after each addition.
