Fresh black truffles deserve the right care. 🍄✨

The best way to store them? It depends on their condition, but these basics always apply:

✔️ Elevate them so they are not sitting in moisture.
✔️ Store them in a single layer whenever possible.
✔️ Keep the container dry and refrigerated.

🚫 Myth: Store truffles in rice.
Reality: Rice pulls moisture from the truffles, causing them to dry out faster and lose valuable weight.

The secret is to check them every day.

💧 If they arrive a little wet, don’t wrap them in paper towels. Place them in an open container in the fridge so they can dry naturally.

🌿 If they feel a little dry, wrap them loosely in a paper towel to help retain their natural humidity. Replace the paper towel daily and keep the container closed.

Every batch is different. Listen to your truffles, they’ll tell you what they need

Looking back at last week very special truffle dinner YOSHIDA. What a night !

Thank you Iverson Guo Karma Wellesley for the opportunity and for being a great host, chef Tony for crafting a thoughtfully crafted omakase (it was perfect and delicious), the entire team YOSHIDA for the warm welcome. And of course, to all the guests… you were a terrific audience! I loved meeting each of you and exploring truffles together!

I will do it again :)

✨ Beauty doesn’t always mean better taste! 😊🍄.

Perfectly round, large truffles are not necessarily the most aromatic. In fact, some of the most irregular and smallest truffles are true flavor bombs!

So how do we know if a truffle is ready and aromatic ? We carefully remove a tiny piece of the skin, a process we call canifé. If the flesh (called the gleba) is deep black, the truffle is perfectly ripe. If it’s still gray, it simply needs more time underground, and was picked up too early.

And here’s a fun fact: Did you know? Towards the end of the season, truffles are often smaller because they grow deeper underground. The pressure of the soil limits their size, but concentrates their aroma. These little truffles are often the most fragrant of all!

So next time you choose a truffle, remember: don’t judge it by its shape. Nature’s imperfections often hide the greatest treasures. 🤎✨
