Grilled Veggie Tacos Recipe

Ingredients:
For the Grilled Vegetables:
โข 1 large red bell pepper, sliced
โข 1 large yellow bell pepper, sliced
โข 1 large zucchini, sliced
โข 1 large red onion, sliced
โข 1 cup mushrooms, sliced
โข 2 tablespoons olive oil
โข 1 teaspoon ground cumin
โข 1 teaspoon chili powder
โข 1 teaspoon smoked paprika
โข Salt and pepper to taste
For the Tacos:
โข 8 small corn or flour tortillas
โข 1 cup shredded lettuce
โข 1/2 cup crumbled feta or cotija cheese
โข 1/2 cup fresh cilantro, chopped
โข 1 avocado, sliced
โข Lime wedges (for serving)
For the Avocado Cilantro Sauce:
โข 1 ripe avocado
โข 1/2 cup Greek yogurt or sour cream
โข 1/4 cup fresh cilantro leaves
โข 1 tablespoon lime juice
โข 1 clove garlic, minced
โข Salt and pepper to taste
Directions:
1. Preheat the Grill:
o Preheat your grill to medium-high heat.
2. Prepare the Vegetables:
o In a large bowl, combine the sliced bell peppers, zucchini, red onion, and mushrooms. Drizzle with olive oil and sprinkle with ground cumin, chili powder, smoked paprika, salt, and pepper. Toss to coat the vegetables evenly.
3. Grill the Vegetables:
o Place the seasoned vegetables in a grill basket or directly on the grill grates. Grill for 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
4. Prepare the Avocado Cilantro Sauce:
o In a blender or food processor, combine the avocado, Greek yogurt or sour cream, cilantro leaves, lime juice, minced garlic, salt, and pepper. Blend until smooth and creamy.
5. Warm the Tortillas:

6. Assemble the Tacos:
o Divide the grilled vegetables among the warm tortillas. Top with shredded lettuce, crumbled cheese, chopped cilantro, and avocado slices. Drizzle with the avocado cilantro sauce.
