This Beetroot Avocado Feta Salad packs a punch with vibrant flavors and gorgeous colors!

Ingredients:

- 2 medium beets, cooked and diced
- 1 ripe avocado, sliced
- 1 cup fresh spinach or arugula leaves

Directions:
1. Wash and dry the spinach or arugula leaves and arrange them on a serving plate or salad bowl.
2. Evenly distribute the diced beetroot over the greens.
3. Add the sliced avocado, arranging it around the salad for an attractive presentation.

2 cups (300 g) mashed sweet potato
1 egg
¼ cup (30 g) flour
2 tbsp (30 ml) olive oil (for frying)
½ tsp salt
¼ tsp black pepper

For the Feta Cream
½ cup (75 g) feta cheese
2 tbsp (30 ml) Greek yogurt
1 tbsp (15 ml) olive oil
1 tsp lemon juice

For the Sriracha Honey
1 tbsp (15 ml) honey
1 tsp sriracha

Garnish
Fresh parsley
Chili flakes

Directions:

1. In a large bowl, combine the mashed sweet potato, egg, flour, salt, and black pepper. Stir until a soft dough forms.
2. Shape the mixture into small patties, approximately 2–3 inches in diameter.
3. Heat olive oil in a skillet over medium heat. Fry the patties for 3–4 minutes on each side, or until they achieve a golden-brown, crispy exterior. Transfer to a plate lined with paper towels.
4. In a small bowl, blend the feta cheese, Greek yogurt, olive oil, and lemon juice until the mixture is smooth and creamy.
5. In another bowl, whisk together the honey and sriracha until fully combined.

Instructions
