Maple sweetness and crunchy pecans come together in a quick, no-bake bite.
Ingredients:
- 1 cup rolled oats
- 1/2 cup chopped pecans
- 1/2 cup creamy peanut butter
- 1/2 cup maple syrup
- 1 teaspoon vanilla
- Pinch of salt
Instructions:
1) In a small pot, melt peanut butter with maple syrup and butter (if using) over low heat until smooth. Remove from heat and stir in vanilla and salt.
2) In a bowl, mix oats and chopped pecans.
3) Pour the warm maple-peanut mixture over the dry mix and stir until everything is coated.
4) Drop spoonfuls onto parchment paper and press lightly to form cookies.
5) Chill in the fridge for 20–30 minutes until firm.
