Resting food the right way

You can cook something perfectly and still lose the crispness while it rests.

Set hot, crispy food directly on a board or plate and the steam gets trapped underneath. Give it some airflow on a rack instead, and that texture you worked for has a much better chance of staying crisp.

One small kitchen habit can create a bigger food safety problem than you realize.

Using the same utensils across different ingredients can increase the risk of cross contamination. Keep your tools separated, especially when working with raw and ready to eat foods.
