A true Finnish original made by Master Cheesemaker Peter Dörig.
Marmori, meaning ‘Marble’ in Finnish, gets its inspiration from the natural birch forests surrounding the creamery.
After trial and error, Peter found the perfect method for combining two sets of curds. The addition of charcoal to one batch of curds presents a cheesemaking challege as the ash works to buffer the acidification and can affect ripening down the road.
To help balance this ripening, Peter draws from his Swiss roots, using a culture blend familiar to Emmentaler. These microbes keep the acidity going and develop the sweet nutty flavors we expect, while the aging for a minimum of 4 months in cold temperatures mitigates eye formation and potentially spicy flavors.
The result: a dense and toothsome paste with beautiful marbling and flavors of raw hazelnut, cooked cream and pleasant lactic acidity finishing with a mild bitterness akin to dark chocolate.
Undeniably snackable, unmistakably Dörig.
