Ingredients:
2 large chicken breasts, halved lengthwise
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano
1/2 tsp paprika
Salt & black pepper, to taste
1 tbsp lemon juice
200g penne pasta
1 tbsp butter
2 garlic cloves, minced
200ml heavy cream
40g grated Parmesan cheese
1 tbsp chopped parsley
400g baby potatoes, halved
1/2 tsp dried thyme
Fresh chopped chives for garnish
Directions:
Preheat the grill to medium-high heat. In a bowl, mix together the olive oil, garlic powder, oregano, paprika, salt, black pepper, and lemon juice. Add the chicken breasts to the bowl and coat them well; let them marinate while you prepare the rest of the dish.
Grill the marinated chicken for about 6-7 minutes on each side, or until it’s cooked through and has those lovely grill marks.
While the chicken is grilling, cook the penne pasta according to the package instructions until it’s al dente. Once done, drain it and set aside.
In a separate pan, melt the butter over medium heat. Add in the minced garlic and sauté until it becomes fragrant.
Pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese and mix until the cheese has melted and the sauce has thickened beautifully.
Toss the cooked pasta into the creamy garlic sauce, ensuring every piece is coated in that delicious goodness.
Meanwhile, boil the halved baby potatoes until they’re tender. Drain them, then toss with olive oil, thyme, salt, and pepper. Spread them out on a baking sheet and roast in the oven until they turn crispy and golden.
Serve the grilled chicken over a generous bed of garlic cream pasta, topped with those crispy potatoes. Finish it off with a sprinkle of chopped parsley and fresh chives for a pop of color and flavor.
