4 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1 tsp salt
½ tsp black pepper
🥔 For the Roasted Baby Potatoes
1½ lb (680 g) baby potatoes, halved
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tbsp fresh parsley, chopped
🥣 For the Creamy Herb Sauce
2 tbsp butter
2 garlic cloves, minced
1 cup (240 ml) heavy cream
½ cup (50 g) grated Parmesan cheese
1 tbsp fresh parsley, chopped
1 tsp Dijon mustard
Salt and black pepper, to taste

Fresh parsley, chopped
Extra Parmesan cheese (optional)
👩🍳 Instructions
1️⃣ Season the Chicken
Pat the chicken breasts dry with paper towels.
Season both sides with garlic powder, paprika, salt, and black pepper. Drizzle with olive oil and let rest for 10 minutes while preparing the potatoes.
2️⃣ Roast the Potatoes
Preheat the oven to 425°F (220°C).
Toss the baby potatoes with olive oil, salt, and pepper until evenly coated.
Spread on a baking sheet in a single layer and roast for 25–30 minutes, turning halfway through, until golden brown and crispy.
Sprinkle with chopped parsley after roasting.
3️⃣ Cook the Chicken
Heat a large skillet or grill pan over medium-high heat.
Cook the chicken breasts for 5–7 minutes per side, depending on thickness, until golden brown and the internal temperature reaches 165°F (74°C).
Transfer to a plate and let rest for 5 minutes before slicing.
4️⃣ Make the Creamy Herb Sauce
In a saucepan over medium heat, melt the butter.
Add the minced garlic and cook for 30 seconds until fragrant.
Pour in the heavy cream and whisk gently. Stir in the Parmesan cheese, Dijon mustard, parsley, salt, and pepper.
Simmer for 3–5 minutes, stirring occasionally, until the sauce becomes smooth, creamy, and slightly thickened.

Arrange the roasted potatoes on serving plates.
Slice the chicken breasts and place beside the potatoes.
Generously spoon the creamy herb sauce over the chicken and potatoes.
