Triple-Layer Chocolate Coconut Dream Bars with Marbled Biscuit Base
Ingredients:
For the Biscuit Base:
2 cups crushed digestive biscuits
1/2 cup crushed chocolate cookies
1/2 cup unsalted butter, melted
2 tablespoons cocoa powder
2 tablespoons brown sugar
1 teaspoon vanilla extract
For the Coconut Cream Layer:
2 cups sweetened shredded coconut
1 can (14 oz) sweetened condensed milk
4 oz cream cheese, softened
1 teaspoon vanilla extract
Pinch of salt
For the Chocolate Topping:
1 1/2 cups semi-sweet chocolate chips
1/3 cup heavy cream
1 tablespoon butter
Directions:
Line an 8x8-inch baking pan with parchment paper.
In a large bowl, combine the crushed digestive biscuits, chocolate cookies, cocoa powder, brown sugar, melted butter, and vanilla extract until evenly moistened.
Press the mixture firmly into the prepared pan to create an even base. Refrigerate for 20 minutes.
In another bowl, mix the cream cheese until smooth.
Add the sweetened condensed milk, vanilla extract, and salt, mixing until creamy.
Fold in the shredded coconut until fully combined.
Spread the coconut mixture evenly over the chilled biscuit base.
Heat the heavy cream until just simmering, then pour it over the chocolate chips. Let stand for 2 minutes before stirring until smooth.
Stir in the butter until glossy.
Pour the chocolate ganache over the coconut layer and spread evenly.
Refrigerate for at least 4 hours or overnight until completely firm.
Lift from the pan, slice into neat squares using a warm knife, and serve chilled.
