Goan Fire-Roasted Beef Chilli Fry with Caramelized Onions and Fragrant Curry Leaves

Ingredients:

1 1/2 pounds beef sirloin or tender beef, thinly sliced
2 tablespoons vegetable oil
2 large onions, thinly sliced
5 cloves garlic, finely minced
1-inch piece fresh ginger, finely grated
3-4 fresh green chilies, sliced
1 teaspoon freshly cracked black pepper
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric powder
1 teaspoon Kashmiri chili powder
1 tablespoon malt vinegar
1 tablespoon soy sauce
1 teaspoon brown sugar
1/2 cup beef stock or water
10-12 fresh curry leaves
1/2 teaspoon garam masala
Salt to taste
2 tablespoons fresh cilantro, chopped
Steamed white rice, for serving
Warm flatbread, for serving

Directions:

Place the sliced beef in a bowl and season with half of the cracked black pepper, cumin, coriander, turmeric, Kashmiri chili powder, and a pinch of salt. Toss well to coat.
Heat 1 tablespoon of oil in a large heavy skillet or wok over medium-high heat. Add the beef in batches, making sure not to overcrowd the pan.
Stir-fry the beef for 2-3 minutes per batch, until browned with lightly charred edges. Transfer the cooked beef to a plate and set aside.
Add the remaining oil to the same pan. Add the curry leaves and cook for 20-30 seconds until fragrant.
Add the sliced onions and cook for 6-8 minutes, stirring occasionally, until deeply softened and caramelized around the edges.
Add the minced garlic, grated ginger, and sliced green chilies. Stir-fry for 1-2 minutes until fragrant.
Add the remaining black pepper, garam masala, malt vinegar, soy sauce, and brown sugar. Stir well to combine.
Pour in the beef stock or water and scrape the bottom of the pan to loosen the flavorful browned bits.
Return the seared beef to the pan and toss thoroughly with the onion and spice mixture.
Cook for another 3-5 minutes, allowing the liquid to reduce into a glossy roasted masala that coats the beef.
Taste and adjust the salt, vinegar, or chili level as desired.
Remove from heat and garnish generously with fresh cilantro, sliced green chilies, and a few crispy curry leaves.
Serve immediately with fluffy steamed rice and warm flatbread.
