Ingredients:
For the Lamb:
4 lamb shanks
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
1 large yellow onion, diced
2 carrots, diced
2 celery stalks, diced
6 garlic cloves, minced
2 tablespoons tomato paste
2 cups dry red wine
2 cups beef stock
1 tablespoon Worcestershire sauce
2 sprigs fresh rosemary
5 sprigs fresh thyme
2 bay leaves
1 teaspoon smoked paprika
For the Gravy:
1 tablespoon butter
1 tablespoon cornstarch mixed with 2 tablespoons cold water (optional, for thickening)
Garnish:
Fresh parsley, chopped
Fresh thyme
Mashed potatoes or creamy polenta for serving
Directions:
Preheat the oven to 325°F (163°C).
Pat the lamb shanks dry and season generously with salt, pepper, and smoked paprika.
Heat olive oil in a large Dutch oven over medium-high heat and sear the lamb shanks until deeply browned on all sides. Remove and set aside.
Add the onion, carrots, and celery to the pot and sauté for 6–8 minutes until softened.
Stir in the garlic and tomato paste and cook for 2 minutes.
Pour in the red wine, scraping the bottom of the pot to release the flavorful browned bits. Simmer for 8 minutes until slightly reduced.
Add the beef stock, Worcestershire sauce, rosemary, thyme, and bay leaves.
Return the lamb shanks to the pot, ensuring they are mostly submerged in the liquid.
Cover tightly and braise in the oven for 3 to 3½ hours, or until the meat is fork-tender and falling off the bone.
Carefully remove the lamb shanks and keep warm.
Strain the cooking liquid and return it to the pot. Stir in the butter and simmer until slightly reduced. Add the cornstarch slurry if a thicker gravy is desired.
Spoon the rich gravy generously over the lamb shanks.
Garnish with fresh parsley and thyme before serving with mashed potatoes or creamy polenta.

Method

Creamy Apple Pie Bake
Mornings can get wild, but this warm apple bake makes the whole house smell like a bakery. It is perfectly sweet, bubbly, and a great way to sneak a protein-packed breakfast into picky eaters. My kids love this new addition to our apple bakes!

Ingredients:
2 cups full-fat (4%) cottage cheese (I am using half cottage cheese and half mascarpone)
3 large eggs
1 large sweet apple (like Honeycrisp or Gala or pink ladies), peeled and finely diced
1/2 cup almond flour
1/4 cup maple syrup or honey
1.5 tsp ground cinnamon
1 tsp vanilla extract
1 tsp baking powder

Instructions:
1. Preheat your oven to 350°F. 180C. Grease an 8x8-inch baking dish generously.
2. In a large bowl, vigorously whisk the eggs, cottage cheese, maple syrup, and vanilla extract until well combined and frothy.
3. Stir in the almond flour, cinnamon, and baking powder until a thick batter forms. Gently fold in the finely diced apples.
4. Spread the batter evenly into your dish. Bake for 35 to 40 minutes until the top is golden and a toothpick inserted in the center comes out clean. Let it rest for 15 minutes before serving.

12 oz linguine
2 large boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
2 tablespoons unsalted butter
3 cloves garlic, minced
2 cups cherry tomatoes
1 teaspoon Italian seasoning
1/2 teaspoon smoked paprika
Salt and freshly ground black pepper, to taste
1/4 teaspoon crushed red pepper flakes (optional)
1/4 cup chicken broth
1 tablespoon balsamic glaze, plus more for serving
1/2 cup freshly grated Parmesan cheese
1/4 cup chopped fresh basil
Fresh parsley, chopped (optional garnish)

Directions:

Bring a large pot of salted water to a boil and cook the linguine until al dente according to package directions. Reserve 1/2 cup pasta water before draining.
Season the chicken with Italian seasoning, smoked paprika, salt, and pepper.
Heat olive oil in a large cast-iron skillet over medium-high heat. Sear the chicken for 6–8 minutes until golden brown and cooked through. Transfer to a plate.
Reduce the heat to medium and melt the butter in the same skillet. Add the garlic and cook for 30 seconds until fragrant.
Add the cherry tomatoes and cook for 5–6 minutes until blistered and lightly caramelized.
Stir in the chicken broth and balsamic glaze, scraping up any browned bits from the bottom of the skillet.
Return the chicken to the skillet and toss to coat.
Add the cooked linguine and a splash of reserved pasta water. Toss until everything is evenly coated.

1/2 teaspoon turmeric
1 teaspoon salt

For the Butter Chicken Sauce:

3 tablespoons unsalted butter
1 tablespoon olive oil
1 medium yellow onion, finely diced
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 1/2 teaspoons garam masala
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper, or to taste
1 can (28 oz / 800 g) crushed tomatoes
1 tablespoon tomato paste
1 cup heavy cream
1/2 cup chicken broth
1 tablespoon brown sugar
1 teaspoon salt, or to taste
2 tablespoons fresh cilantro, chopped, for garnish

Directions:

In a large bowl, combine the yogurt, lemon juice, grated ginger, minced garlic, garam masala, cumin, coriander, paprika, turmeric, and salt.
Add the chicken pieces and toss thoroughly until every piece is coated in the marinade. Cover and refrigerate for at least 30 minutes, or preferably 2-4 hours for deeper flavor.

Bacon and Tomato Sandwiches

Directions

1. Start by cooking the bacon until it’s nice and crispy. Drain it on a paper towel while you get everything else ready.

2. Toast your bread slices until they’re golden and just the way you like them.

3. Spread a generous layer of mayonnaise on one side of each toasted slice.

4. On one slice, layer fresh lettuce leaves, your crispy bacon, and thick slices of tomato.

5. Sprinkle a little salt and pepper over the tomatoes to bring out their best flavor.

6. Place the second slice of bread on top, mayonnaise side down, to finish your sandwich.

7. Slice your sandwich in half and serve it up while that bacon’s still warm.
