Slow-Cooked Lamb Shanks with Herb-Infused Gravy
Ingredients:
- 4 lamb shanks
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cups beef or vegetable broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- Salt and pepper to taste
- 2 bay leaves
- Fresh parsley for garnish
Directions:
1. Heat the olive oil in a large skillet over medium-high heat. Brown the lamb shanks on all sides. Remove them from the skillet and set aside.
2. In the same skillet, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until they are softened.
3. Add the minced garlic and cook for another minute until fragrant.
4. Stir in the tomato paste, red wine, broth, thyme, rosemary, salt, pepper, and bay leaves. Bring the mixture to a simmer.
5. Place the browned lamb shanks in a slow cooker. Pour the vegetable and wine mixture over the shanks.
6. Cover and cook on low for 6 to 8 hours, or until the lamb is tender and falls off the bone.
7. Once cooked, remove the lamb shanks from the slow cooker and set them aside. Discard the bay leaves.
8. If you want a thicker gravy, you can transfer the cooking liquid to a saucepan and simmer it on the stove until it thickens.
9. Serve the lamb shanks with the herb-infused gravy drizzled on top. Garnish with fresh parsley.
