Harvest season is underway at Disznókő, where grape picking is an art of extreme patience and precision. 
 
Harvesters pass through the vineyard multiple times from late August through November, hand-selecting grapes at three distinct ripening stages, Full Ripe used to craft vibrant dry whites, Overripe, picked for rich, aromatic Tokaji Late Harvest Blends, and Aszu Harvest, individual botrytized berries selected one by one daily.
 
The interplay between Botrytis cinerea (noble rot) and natural on-vine shriveling creates extraordinary flavor concentration, balancing rich, honeyed sweetness with vibrant, fresh acidity. 🥂

Last week we had the pleasure of welcoming Ginny Povall, owner and w**emaker at Botanica W**es in South Africa to our New York office to take us through a selection of her w**es including the Mary Delany Chenin Blanc, the Mary Delany Pinot Noir and the Arboretum Red Blend alongside many others. Her masterclass was an insightful look into her process as a self-taught w**emaker and what it means to grow on Protea Heights historic farm.

Despite possessing the terroir and reputation worthy of the 1855 Classification, Chateau Siran is notably absent from it. At the time, the Toulouse-Lautrec family declined to participate in what they viewed as a ‘Bonapartist’ ranking. True to this independent spirit and having been in the Miailhe family for more than 165 years, the estate was classified as one of just nine Cru Bourgeois Exceptionnel in 2003 before choosing to step away from the official system entirely, continuing to chart its own path of excellence as a proudly independent, family-owned w**e.

Now in the hands of the 15th generation via the Van Zeller family, this historic brand beautifully bridges centuries of tradition with modern innovation. Case in point: they pioneered the use of clear glass bottles, completely changing how Port is presented by putting the w**e’s rich, brilliant color palette on full display.

The name honors Goleto Abbey, a 12th-century site the w**ery describes as “shrouded by light and mystery” and that same spirit carries through every bottle. Goleto brings the region’s historic cultivation methods into the modern world; opening one feels like opening a portal to the past.
