The weather was nice, so I threw a brisket into the pit. Turned out very good: good bark, moist, maybe a tad too salty, but the pepper portions were spot on. High winds were a challenge with the fire, and I was concerned about some fluctuating temps, but the final result was good. Smoke On!

I’ve got the good smoke rolling over 2 briskets and 2 pork butts. All is good except it’s gonna be a hot one today by the pit.

Follow up on yesterday's bbq. I was happy to give some friends and neighbors 2.5 briskets, leaving 1/2 brisket and a rack of beef ribs for us.Everyone was thankful for the Christmas BBQ, but the bbq itself, from what I had at home, was just .......meh. Fire was good, temps were good, weather, it was a good cook, but the meat, while flavorful, was slightly undercooked. pulled at 205. Well, we ate good anyway. Blessings yall!
