Baked Ziti with plant based meatballs? I have to keep it real with you all, Iโ€™ve had a lot of baked ziti in my life, and Iโ€™ve cooked even more. But this right here? Honestly, it was better than most versions Iโ€™ve had that actually used meat. The flavor just hit different.

I used plant based home style meatballs and started them in the air fryer to get that crisp texture. Then, I let them simmer on the stove in a tomato basil marinara sauce to really soak up the seasoning, adding some red pepper flakes for a nice little kick at the end.

After that is the fun part, assembling and where this all comes together. I added sauce to the bottom of my tray and some thick layers of ziti, creamy ricotta, mozzarella into the tray and of course these amazing plant based meatballs all in between. I finished it all off with more fresh basil and a heavy hand of Parmesan and Romano cheese.

Also, weโ€™re just gonna ignore the tray while giving a quick shout out to the store that used to be a dollar until they werenโ€™t, for this funky looking thing. It was a last minute move and it definitely shows, but luckily the food is doing all the heavy lifting here and if youโ€™re pescatarian or like myself whoโ€™s considered a โ€œPollo Pescatarianโ€ then this is absolutely the way to go. ๐Ÿ๐Ÿ”ฅ

๐ŸŽ‰ Today, Iโ€™m celebrating my m***a F$cking BIRTHDAY!! I feel truly blessed to have another year of life. Itโ€™s been a non stop party so far and itโ€™s not stopping today!

Iโ€™m grateful for all the experiences life has offered me, both good and the challenging. Each moment has shaped me into who I am, and I wouldnโ€™t change a thingโ€ฆ. Maybe a few things but regardless I want to thank everyone for all the love, and I even extend gratitude to my enemies, hoping they find a way to live life without animosity.

Air Fryer Tandoori Chicken Tikka with Basmati Rice.

Havenโ€™t been posting as much as I would like for more personal reasons but that doesnโ€™t mean I havenโ€™t been putting in work in the kitchen. Iโ€™ve always loved Indian food or doing Indian fusion food and lately Iโ€™ve really been craving it so I decided to make this week dedicated to making some of my favorite dishes and of course putting little twists on them when I can.

This chicken recipe has a lot going on using grated ginger, grated garlic
1 tbsp Kashmiri chilli/ turmeric powder, garam masala, cumin powder and ground black pepper and yogurt while also using red curry paste and a curry simmer sauce to really bring out the flavor.

The basmati rice that I made isnโ€™t traditional Indian rice by any means but I break the rules quite a bit. The rice was sautรฉed with aromatics before cooking in broth to create a more seasoned and defined rice and went great with the chicken and canโ€™t wait to make it again!

And the war continues? Empanadas? Pastelitos? Empanadillas? Well for me itโ€™s Pastelitos if itโ€™s closed with a fork and Empanadillas if itโ€™s crimped shut and folded over with your fingers. Either way this is something for the entire family.

So, this can be made a few ways but then thereโ€™s my way, so ditch the Ragu or Prego bottle, make your own sauce with canned tomatoes and for me im team Cento. Now grab salt, pepper, oregano, garlic, red wine and fresh basil, mix it all together and then mix it in a in another bowl with fresh mozzarella shredded cheese until a thick consistency. All thatโ€™s left to do is scoop a good amount out, place it in the middle of your disc, fold over to close, use a fork to seal the edges and fry it up!

2 packs Pad Thai noodles
2 tablespoons sesame oil
1 tablespoon of chopped garlic
1 tablespoon minced ginger
ยผ cup sliced onions
ยผ cup sliced scallions
ยผ cup water chestnuts
ยผ cup baby corn
ยผ cup bean sprouts
ยผ cup crushed roasted peanuts
1 tablespoons Thai red chili paste
4 garlic cloves thinly sliced
5-6 lime wedges
Half pound of shrimp
2 large brown eggs
1 teaspoon red pepper flakes

For the Pad Thai Sauce
ยผ cup vegetable stock
3 tablespoons soy sauce
3 tablespoons palm sugar
1 teaspoon tamarind paste
1 teaspoon Thai garlic red chili paste
2 tablespoons fish sauce
salt (to taste)
ยฝ cup water

Because I love Pizza! I made a few pizzas last week just experimenting and this was probably one of the better outcomes.

The flour was made using Capito 00 flour with pink Himalayan salt, fresh ground pepper, sugar, dry active yeast water and olive oil that was made the day before to rest.

For the sauce, I used Centos whole tomatoes and added fresh garlic, salt, pepper, sugar, Dominican oregano, onions, red pepper flakes and basil to blend.

Once the dough was rolled out I cooked this in my cast iron and added more salt, pepper parmasean cheese and oregano onto the dough. After that I added shredded pepper jack cheese, Asiago cheese and fresh shredded mozzarella cheese. Along with that I added sliced pastrami, onions and toward the I set the oven to broil and then right before I took this bad boy out, I added some cherry tomatoes and finished it off with a little more fresh basil. Definitely not a pizza master by any means but this was something special to say the least!

One of my favorite Puerto Rican dishes of all time is Mofongo. This can be served many different ways but this is hands down my favorite way for plating this dish. Marinated and seasoned thick chunks of pork with pickled red onions and fried plantains mashed and combined in a savory buttery garlic sauce along with pieces of chicharron.
