The news is, I've closed the cooking side of the business to do more education, consulting and writing. Super fun to be sure but nooowww I have quite a lot of items I hope my local chef and catering foodpreneurs may find useful!

Shared commercial kitchens not only help emerging food and beverage businesses overcome ENORMOUS financial and regulatory barriers to grow from a start up to a viable business, they also have a massive economic impact. Bigger than you’d think. Waaaay bigger than I’d thought.

A 2022 research report by the Agricultural Utilization Research Institute in Minnesota found the food and beverage sector to be a driver of economic activity, providing the highest overall returns of ANY industry in the state; a 5% gain in this sector yielded an $11 billion (Billion! with a B!!!) impact to the state’s economy and added over 165,000 jobs. Nice.

And this is regardless of whether the businesses are urban or rural, and research in other states are finding similar results.

I mean, everybody eats! And many of us dream of having a thriving business within our communities and beyond to make sure everyone eating is nourished, happy, and satisfied with their choices. But it’s expensive, risky and difficult to scale.

Kitchens like Bedford Collab make it possible through access, training, resource sharing, and collaborative support among businesses - truly a rising tide lifts all boats situation. They exemplify best practices in the shared and incubator kitchen industry and we are beyond lucky to have them coming online in our city.

Lexie learned about food by simply living life. Both of her parents cooked equally in the kitchen and encouraged trying new things. The family food motto was and is “Always eat the weird food!” That laid the foundation for big curiosity for flavors. When she goes anywhere new, her first stops are at a grocery store to take in new ingredients and a place to eat that features local specialties. And luckily, she was able to go to lots of new places! She studied abroad in Australia and experienced the food and culture of the south Pacific. She married a professional hockey player, whose career took them to cities throughout the US and Europe. With 20+ moves, that’s a LOT of good food! She’s lived in Georgia, North Carolina, Florida, Australia, Pennsylvania, Massachusetts, Germany, Ohio, Austria, Illinois, England, Colorado and Indiana… and add in all of the travel in between! It’s all informed her palate and skill set to be able to bring it together for the benefit of her family, friends and clients. She loves to cook any and everything - from down home favorites to authentic global cuisine to wild interpretations. People will always ask her “What is your favorite thing to cook and eat?” The answer? “Food is my favorite food.” Life is delicious, live it up!
