I'm responsible for New Year's Eve dessert and I'm experimenting. What can go wrong? I decided on chocolate cheese cake and brownies…together. It's in the oven, I'll let you know how it turns out in about 7 hours. I used this recipe for choco cheese cake: http://www.epicurious.com/recipes/food/views/Deep-Dark-Chocolate-Cheesecake-236209 . Then I folded tiny little brownies into the batter before baking (I used Blue Egg Baking Co. gluten free brownie mix, froze the brownies, then cut them into tiny cubes). Here's hoping it works! Here is one of our favorite - EASY & NUTRITIOUS - holiday recipes.

Gingerbread Brownies

2 large eggs
1/2 cup oil
1/2 tsp plus a pinch ground ginger
1/2 tsp cinnamon
1/8 tsp ground clove
1 cup fresh, grated zucchini, squash or carrots (excess liquid removed) or thinly sliced spinach
One box Blue Egg Brownie Mix

Whisk eggs & oil. Mix spices into dry brownie mix. Combine egg
mixture with brownie mix. Stir in veggies. Bake as directed on box.
Enjoy!
